Prepare and Dry Shake
If using egg white, add vanilla vodka, passion fruit liqueur, passion fruit purée, lime juice, simple syrup and egg white to a cocktail shaker (no ice). Dry shake vigorously for 10–15 seconds to emulsify and build a silky texture.
Wet Shake
Add ice to the shaker (about 1 cup). Shake vigorously for 12–15 seconds until well chilled and the shaker is frosty. This chills and dilutes the drink to the proper balance.
Garnish
Float a half passion fruit in the glass (cut side up) or spoon a tablespoon of pulp on top for aroma and visual appeal.
Shot / Side
Pour 3 oz of chilled champagne or dry sparkling wine into a small flute or shot glass and serve immediately alongside the cocktail. The traditional presentation is the cocktail served with the sparkling wine on the side so the drinker can sip the fizz between sips of the cocktail or pour a splash into the cocktail to taste.
