Method
Cocktail
Dry shake
In a cocktail shaker, combine 2 oz reposado tequila, 0.5 oz orange curaçao, 0.5 oz fresh lime juice, 0.5 oz fresh orange juice, 0.5 oz agave syrup, 1 egg white, and 3 dashes Angostura bitters. Do NOT add ice yet. Seal the shaker and shake vigorously for 20–30 seconds to emulsify the egg white and create a foamy texture.
Wet shake
Open the shaker, add a generous handful of ice (about 1 cup). Seal and shake hard for 12–15 seconds until the outside of the shaker is frosty and well chilled.
Double strain and garnish
Discard ice/water from the chilled glass if used. Double-strain the cocktail into the chilled coupe using a Hawthorne strainer and a fine mesh strainer to ensure a silky foam. Express an orange twist over the top to release oils, rub the rim lightly with the twist if desired, and place the twist on the foam. If using edible gold leaf, carefully apply a small fleck (about 1/4 tsp worth of leaf fragments) to the foam for a luxurious finish.
Serve
Serve immediately while the foam is fresh. Optionally, place one tiny dot of Angostura bitters on the foam and use a toothpick to create a small decorative swirl.
Glass & Ice
Ensure the glass is chilled and the ice used for shaking is fresh. Use the ice only for shaking; do not serve the cocktail on ice so the texture and aroma remain concentrated.
