Beef Ribs & Marinade

    Trim and Dry

    Pat the whole beef rib rack dry with paper towels. Trim any excessive silver skin or loose fat, but leave a thin layer of fat for flavor and moisture.

    Make Dry Rub

    In a small bowl combine kosher salt, coarsely ground black pepper, smoked paprika, brown sugar, garlic powder, onion powder, dry mustard, and chipotle or cayenne (if using). Mix thoroughly.

    Apply Rub

    Rub the rib rack all over with olive oil, then massage the dry rub evenly onto all surfaces, pressing so it adheres. Let rest at room temperature for 30 minutes or refrigerate (covered) for up to 4 hours for deeper flavor. If refrigerated, bring to room temp 30 minutes before cooking.

Braising Liquid & Sauce

    Prepare Liquid

    In a bowl or measuring cup whisk together beef stock (or stock + wine), tomato paste, Worcestershire sauce, additional brown sugar, and apple cider vinegar until smooth. Keep bay leaf nearby to add to the braising pan.

    Prep Vegetables

    Arrange the onion halves (sliced into wedges), carrot chunks, celery stalk, and smashed garlic in the bottom of a large, heavy ovenproof braising pan or Dutch oven. These will form a flavor base and act as a rack so the meat isn't sitting directly on the pan bottom.

Braising & Cooking

    Sear the Ribs

    Preheat oven to 300°F (150°C). Heat the braising pan over medium-high heat on the stovetop. Add 1 tablespoon olive oil if pan is dry. Once shimmering, place the rib rack bone-side up (or meat-side down first, depending on fit) and sear 3–4 minutes per side until deeply browned. Use tongs to hold the rack and brown the ends as well. Do not overcrowd; if needed, sear in two passes.

    Assemble for Braise

    Place the seared rib rack on top of the bed of aromatics in the braising pan, bone-side down so meat faces up (this lets connective tissue and fat baste the meat). Pour the prepared braising liquid around the ribs (not over the rub on top) until the liquid reaches about 1 to 1 1/2 inches up the sides of the ribs. Add the bay leaf.

    Cover and Braise

    Bring the liquid to a gentle simmer on the stovetop, then cover the pan tightly with its lid or aluminum foil. Transfer to the preheated oven and braise for 2 to 2 1/2 hours, or until the meat is fork-tender and a meat thermometer in the thickest part reads about 200–205°F (93–96°C) and the bones start to pull away slightly.

    Optional Glaze and Finish

    If you want a glazed exterior, remove the pan from the oven when ribs are tender. Carefully lift the ribs from the pan onto a rimmed sheet tray. Skim fat from the braising liquid and reserve 1/2 cup of the liquid. Brush the rib tops with barbecue sauce (if using) or reduce 1/2 cup of braising liquid in a small saucepan over medium-high heat until syrupy (3–5 minutes) and brush as glaze. Place under a preheated broiler or in a 500°F (260°C) oven for 3–5 minutes to caramelize, watching closely to avoid burning.

    Rest

    Let the ribs rest 10 minutes on the tray tented loosely with foil. This allows juices to redistribute and makes slicing easier.

Finishing & Serving

    Carve the rack into individual bones or slices between bones using a sharp chef's knife. Spoon some of the strained braising sauce over the ribs. Sprinkle chopped fresh parsley and a grind of black pepper over the top.

    Serve the ribs warm with roasted vegetables, mashed potatoes, or your preferred sides. Leftovers can be cooled, covered, and refrigerated for up to 3 days.
