Method

Brisket Chili

    Prepare brisket

    If your USDA brisket is refrigerated, bring it to room temperature for 20–30 minutes. Shred or chop the brisket into bite-sized pieces and set aside.

    Heat a large heavy-bottomed pot or Dutch oven over medium-high heat. Add 2 tbs vegetable oil.

    Add the diced onion and cook, stirring occasionally, until translucent, 4–6 minutes. Add the diced red bell pepper and cook 3 minutes more until softened.

    Stir in the minced garlic and minced jalapeño and cook 30–45 seconds, until fragrant.

    Add the tomato paste and cook, stirring, 2 minutes to caramelize and remove raw flavor.

    Stir in the crushed tomatoes, beef broth, chipotle in adobo, ground cumin, smoked paprika, chili powder, oregano, brown sugar, kosher salt, and black pepper. Stir to combine and bring to a gentle simmer.

    Add the shredded brisket and optional beans to the pot, submerging them in the sauce. Reduce heat to low and simmer, partially covered, for 25–35 minutes to allow flavors to meld and the brisket to become tender. Stir occasionally and adjust thickness with more broth (1/4 cup at a time) if too thick.

    Taste and adjust seasoning with additional salt, pepper, or chipotle for heat. Keep warm on low while you prepare toppings.

Pico de Gallo

    Combine the diced Roma tomatoes, white onion, chopped cilantro, and minced jalapeño in a medium bowl.

    Add the lime juice and 1/2 tsp kosher salt. Toss gently and let rest 10–15 minutes at room temperature to marry flavors. Taste and adjust salt or lime as desired.

Cheese Sauce

    In a small saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1–2 minutes to make a roux, whisking constantly so it does not brown.

    Slowly whisk in the milk, continuing to whisk until the mixture is smooth and begins to thicken, about 3–4 minutes.

    Reduce heat to low and whisk in the grated cheddar and cream cheese a handful at a time until fully melted and smooth. Stir in ground mustard (if using), 1/4 tsp kosher salt, and 1/4 tsp black pepper. Keep warm on very low and stir occasionally to prevent a skin from forming.

    If the sauce is too thick, whisk in up to 2 tbs more milk to reach a pourable consistency.

Pickled Jalapeños

    In a small saucepan, combine 1/2 cup vinegar, 1/2 cup water, 1 tsp sugar, and 1/2 tsp kosher salt. Bring to a simmer until sugar and salt dissolve, about 1–2 minutes.

    Place the sliced jalapeños in a heatproof jar or bowl and pour the hot pickling liquid over them. Let cool to room temperature, then cover and refrigerate at least 30 minutes before serving (longer for more pickling flavor).

Assembly & Serve

    Ladle the brisket chili into bowls.

    Top each bowl with a spoonful of pico de gallo, a drizzle of warm cheese sauce, a dollop of sour cream, and a few pickled jalapeño rings.

    Garnish with chopped cilantro leaves, sliced green onions, and a lime wedge on the side for squeezing.

    Serve immediately. Leftover chili keeps refrigerated in an airtight container for up to 4 days; reheat gently on the stove and thin with a splash of broth if necessary.
