Trim and dry
Pat the brisket dry with paper towels. Trim excess hard fat, leaving about 1/4 inch of fat cap for flavor and moisture. Let sit at room temperature for 30 minutes while you prepare the rub and preheat the oven to 300°F (150°C).

Make the rub
In a small bowl, combine kosher salt, cracked black pepper, garlic powder, onion powder, smoked paprika, and brown sugar. Mix until even.

Season brisket
Brush the brisket lightly with neutral oil to help the rub adhere. Generously rub the seasoning mixture all over the brisket, covering both the flat and point. Press the rub into the meat.

Sear (optional but recommended)
Heat a large, heavy-bottomed Dutch oven or ovenproof skillet over medium-high heat. Add a little oil and when shimmering, sear the brisket fat-side down for 4–6 minutes until browned. Flip and sear the other side 3–4 minutes to develop a deep brown crust. Remove brisket to a plate and reserve.

Deglaze
Pour in the dry red wine (if using) and scrape up brown bits from the bottom of the pan with a wooden spoon. Allow wine to reduce by half, about 3–4 minutes. If not using wine, add 1/2 cup of beef broth and deglaze similarly.

Add liquids and aromatics
Return the brisket to the pot, fat-side up. Add beef broth, Worcestershire sauce, bay leaves, and thyme sprigs. The liquid should come up about one-third to one-half of the brisket height (do not fully submerge). Bring the liquid to a gentle simmer on the stovetop.

Braise covered
Cover the Dutch oven with a tight-fitting lid and place in the preheated oven. Braise at 300°F (150°C) for 3 to 3.5 hours for a 6-lb brisket, or until a fork or probe slides into the meat with little resistance and the internal temperature reaches about 195–203°F (90–95°C) for tender, shreddable brisket. Check once at about 2 hours; if the liquid is evaporating too quickly, add up to 1/2 cup more broth.

Rest
Remove the pot from the oven. Transfer the brisket to a cutting board, tent loosely with foil, and rest for 20–30 minutes. While resting, skim excess fat from the surface of the braising liquid and discard bay leaves and thyme stems.
Finishing & Serving

Make pan sauce
Place the braising liquid and vegetables on the stovetop over medium heat. Simmer until slightly reduced, about 6–10 minutes. Optionally, strain solids and return sauce to the pan. Whisk in apple cider vinegar and cold butter, one cube at a time, to finish and slightly thicken the sauce. Taste and adjust seasoning with salt and pepper.

Slice brisket
Slice the brisket against the grain. Note: the flat and point have different grain directions — identify the grain and slice thinly across it for the most tender bites. For shreddable brisket, use forks to pull apart into large pieces.

Serve
Arrange sliced or shredded brisket on a serving platter, spoon pan sauce over the top, and sprinkle with chopped fresh parsley if desired. Serve with horseradish or barbecue sauce on the side, and reserved vegetables alongside or mashed.
