Prepare glass
Run a lime wedge around the outer rim (or inner lip) of a rocks or coupe glass. Spread the coarse salt on a small plate and gently press the rim into the salt to coat. Set the glass aside.

Mix drink
Add mezcal (2 oz), fresh lime juice (1 oz), agave syrup (0.5 oz) and 2 dashes orange bitters into a cocktail shaker filled with ice (about 3/4 full).

Shake
Shake vigorously for 10–15 seconds until the shaker feels cold and slightly frosty. This both chills and dilutes the drink to proper balance.

Strain & serve
Double-strain (fine strainer optional) into the prepared glass over fresh ice (if serving on the rocks) or without ice for a neat presentation. If using a rocks glass, add 1–2 large ice cubes.

Express a lime peel or squeeze a small lime wedge over the drink to release oils, then rub the wedge on the rim and drop it into the drink or place a lime wheel on the rim. Serve immediately.
