Prepare bread
Trim crusts from the bread slices if you want the classic sando look. Lightly spread 1 teaspoon of softened butter on one side of each slice to help seal and add richness.

Mix mayonnaise and Dijon mustard in a small bowl. Use about 1/2 tablespoon of the mixture per slice where indicated in the assembly steps.

To assemble each sando: spread mayonnaise-mustard on the bottom slice (buttered side down if you used butter), arrange the cooked protein, then a thin layer of shredded cabbage and cucumber, a drizzle of any remaining sauce, and top with the second slice of bread, buttered side up. Press gently and trim edges for neat rectangles if desired.

Marinate chicken
Pat chicken breasts dry and, if thick, butterfly or pound to an even 1/2-inch thickness. In a bowl combine soy sauce, mirin, sake (if using), minced garlic and grated ginger. Add the chicken and let marinate 15–30 minutes at room temperature or up to 2 hours refrigerated.

Bread the chicken
Set up a breading station: flour in one shallow dish, beaten eggs in a second, and panko in a third. Remove chicken from marinade, let excess drip off, dredge in flour (shake off excess), dip in beaten egg, then press into panko to coat evenly.

Cook the chicken
Heat 3 tablespoons vegetable oil in a large skillet over medium heat until shimmering. Add the breaded chicken and cook 3–4 minutes per side until golden-brown and internal temperature reaches 74°C (165°F). Transfer to paper towels and rest 5 minutes, then slice into sandwich-sized strips.

Toss shredded cabbage with a pinch of kosher salt and a light drizzle (about 1 tsp) of the leftover mirin or a splash of rice vinegar to season and soften slightly. Pat dry before assembling.

Top with the remaining bread slices (buttered side up). Press down gently with your palm or a sandwich press for 10–20 seconds to help the sandwich stick together.

Trim off the crusts with a sharp knife and cut each sandwich into halves or thirds to serve. Serve immediately while chicken is warm. Leftovers: wrap tightly and refrigerate up to 24 hours to preserve bread texture.
