Dry shake (if using egg white)
In a cocktail shaker, combine 2 oz gin, 1/2 oz elderflower liqueur (Stella or substitute), 3/4 oz fresh lemon juice, 1/2 oz simple syrup, 1/2 egg white (about 1/2 unit), and 2 dashes Angostura bitters. Seal the shaker and dry shake (no ice) vigorously for 15–20 seconds to emulsify and build foam.
Wet shake
Open the shaker, add 4 cubes of ice, reseal, and shake vigorously for 12–15 seconds until the shaker is very cold to the touch and properly diluted.
Strain
Discard the ice water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a fine mesh strainer to remove ice shards and any coagulated egg white.
Finish
Express a lemon twist over the surface to release oils, run the peel around the rim, and drop it into the drink as garnish. Optionally, add a final 1–2 drops of Angostura bitters on the foam and, using a toothpick, drag a small pattern if desired.
Serve
Serve immediately while the foam is fresh and the cocktail is cold.
