Prepare Syrup (optional)

Ginger-lime syrup
If you don't have ginger-lime syrup, make a quick version: combine 1/2 cup sugar, 1/2 cup water, 1/4 cup peeled sliced fresh ginger in a small saucepan. Bring to a simmer until sugar dissolves, steep 20 minutes off heat, strain, then stir in 2 tablespoons fresh lime juice. Cool and store. Use 0.5 oz in the cocktail.

Add the añejo rum, overproof rum, fresh lime juice, fresh grapefruit juice, pineapple juice, ginger-lime syrup, falernum, and Angostura bitters to a cocktail shaker.

Fill the shaker with ice and shake vigorously for 12–18 seconds until well chilled and diluted.

Fill a rocks glass or double old-fashioned glass with crushed ice.

Strain the shaken contents over the crushed ice, allowing some of the liquid to cascade over the ice bed.
Finish & Garnish

Express the oils of the grapefruit twist over the surface of the drink and drop the twist in or hang it on the rim.

Slap the mint sprig between your palms to wake the aromatics and place it into the drink as a garnish.

Optionally, float a few drops (or 0.25 oz) of overproof rum on top and carefully ignite for a brief flame, then extinguish before drinking. (Exercise extreme caution; only attempt if comfortable with flaming cocktails.)
