    Select and rinse

    Choose 4 ripe but firm peaches (should yield slightly to gentle pressure). Rinse under cool running water and pat dry.

    Serve whole or halved

    For a simple presentation, serve peaches whole with a lemon wedge and mint sprig. To eat, cut peach around the seam from stem to tip, twist halves apart, and remove the pit with a spoon or knife.

    Quick finish

    If using the optional simple syrup or poached peaches (see sections below), place a peach half on a plate, spoon a little syrup over it, and garnish with mint.

    Make quick glaze

    Combine 2 tablespoons sugar and 2 tablespoons water in a small saucepan over low heat. Stir until sugar dissolves. Remove from heat and stir in 1 teaspoon lemon juice. Let cool briefly. Brush or spoon over halved peaches to add shine and a touch of sweetness.

    Prepare poaching liquid

    In a wide saucepan combine 4 cups water, 1 cup white wine (or use 1 additional cup water), 1 cup granulated sugar, the split vanilla pod (or 1 teaspoon vanilla extract added at the end), and the cinnamon stick. Bring to a simmer over medium heat, stirring until sugar dissolves. Keep the liquid at a gentle simmer — not a rolling boil.

    Poach the peaches

    While the poaching liquid heats, blanch peaches for 20–30 seconds in boiling water, then plunge into ice water. This step makes skins easier to remove: use a paring knife to gently peel the skins off. Halve the peaches and remove pits. Carefully add peach halves to the simmering poaching liquid, cut-side down. Poach 3–6 minutes depending on ripeness (so they hold shape but are tender).

    Cool and serve

    Using a slotted spoon, transfer poached peaches to a bowl to cool slightly. Reduce the poaching liquid over medium-high heat for 6–8 minutes until slightly syrupy, or stir in the prepared simple syrup for a quick glaze. Spoon syrup over peaches and serve warm or chilled with mint garnish and lemon wedge if desired.
