Chill glass (optional)
If you prefer a slightly colder serve, place the Old-fashioned glass in the freezer for 5–10 minutes or fill it with ice and water while you prepare the other elements, then discard the ice water before building the cocktail.
Add bitters and syrup
Place the Old-fashioned glass on your work surface. Add 3 dashes of Angostura bitters into the bottom of the glass, then add 0.5 oz (1/2 oz) demerara syrup.
Add bourbon
Pour 2 oz Evan Williams Extra Aged bourbon into the glass over the bitters and syrup.
Prepare and express orange peel
Using a peeler or sharp knife, cut a 1.5–2 inch (4–5 cm) wide strip of orange peel, avoiding too much white pith. Hold the peel between thumb and forefinger about 2–3 inches above the drink, skin side facing down. Firmly give the peel a quick twist or squeeze to express the oils over the surface of the cocktail, then rub the peel around the rim of the glass to transfer aroma.
Garnish and serve
Drop the expressed orange peel into the glass as garnish (or place it on the rim). Serve immediately.
