Method

Cocktail

  1. 1

    Prepare mixing glass and ice

Fill a mixing glass or a large heatproof glass with plenty of ice (about 2/3 full) to properly chill and dilute the drink.

  2. 2

    Measure and add spirits

Add 2 oz of Kentucky bourbon, 0.75 oz sweet vermouth, 0.5 oz amaro, and 0.25 oz Luxardo maraschino into the mixing glass over the ice.

  3. 3

    Add bitters

Add 2 dashes of Angostura bitters and 1 dash of orange bitters to the mixing glass.

  4. 4

    Stir to chill and dilute

Using a bar spoon, stir the mixture briskly for 20–30 seconds (about 20–30 full rotations) until the outside of the mixing glass is well chilled and slight dilution has occurred. Aim for about 20–25% dilution for balance.

  5. 5

    Prepare serving glass

Place a large chilled old-fashioned glass or rocks glass on the bar and add one large clear ice cube (or two large pieces) to the glass.

  6. 6

    Strain and finish

Double-strain or fine-strain the stirred cocktail from the mixing glass into the prepared serving glass over the large ice cube(s) to keep out small shards of ice and any bits of peel or seeds.

  7. 7

    Express oil and garnish

Take an orange peel and hold it over the drink skin-side down. Give it a sharp twist to express the citrus oils onto the surface of the cocktail, then rub the peel around the rim and drop it into the glass as a garnish.

  8. 8

Serve immediately. Recommend pairing the drink with a small dish of roasted nuts or dark chocolate to complement the bourbon's spice and the amaro's bittersweet notes.
