Roast (optional, for smoky depth)
Preheat a skillet over medium-high heat. Add tomatoes, onion chunks, and halved habaneros (cut side down) to the dry skillet. Cook 6–8 minutes, turning occasionally, until skins blacken and soften. Alternatively, roast under a broiler on a rimmed sheet for 8–10 minutes, turning once.

Sauté garlic and combine
In a small saucepan, heat olive oil over medium heat. Add garlic and sauté 30–45 seconds until fragrant but not brown. Add roasted vegetables to the saucepan along with 1 cup water and bring to a gentle simmer for 5 minutes to meld flavors.

Remove from heat and let cool slightly (2–3 minutes) before transferring to a blender or food processor.

Blend and season
Add distilled white vinegar, honey, lime juice, ground cumin, smoked paprika, sea salt, and black pepper to the blender with the warm vegetable mixture. Blend on high until completely smooth, about 1–2 minutes. Taste carefully and adjust salt, honey (for sweetness), or lime (for brightness) as needed.

Cook to develop flavor
Pour blended sauce back into the saucepan. Bring to a low simmer over low heat and cook 6–8 minutes, stirring occasionally. This soft cooks the raw edge and thickens the sauce slightly. If the sauce is too thick, add up to 2 tbs water; if too thin, simmer a couple minutes longer.

Cool and store
