Rinse and prevent browning
Wash the apples under cool running water to remove any wax and debris. In a shallow bowl, combine 1 cup water with the juice of 1/2 the lemon. Submerge the whole apples in the lemon water for 2 minutes to prevent browning while you prepare other ingredients, then remove and pat dry with a clean towel.

Core and slice
Place an apple on a cutting board. Using a paring knife or apple corer, remove the core and seeds. Slice each apple into 8 even wedges (about 1/2-inch thick). Repeat with remaining apples. If slices begin to brown, briefly return them to the lemon water for 30–60 seconds, then drain and pat dry.

Saute to finish
Heat a large nonstick skillet over medium heat. Add 2 tablespoons unsalted butter and allow to melt and foam. Add the apple slices in a single layer (work in two batches if needed). Sprinkle about 1 teaspoon granulated sugar and a light pinch of the cinnamon over each batch in the skillet. Cook the slices 2–3 minutes on the first side without moving them so they caramelize, then flip and cook another 1–2 minutes until tender-crisp and golden at the edges.

Season and serve
Transfer the cooked apple slices to a serving plate. Sprinkle the remaining sugar and cinnamon over all slices, and finish with a small scatter of coarse sea salt (about 1/4 to 1/2 teaspoon total, to taste). Drizzle each serving with about 1 teaspoon honey or maple syrup if you'd like extra sweetness. Serve warm or at room temperature.
