Make the caramel
In a medium heavy-bottomed saucepan, combine the granulated sugar and 2 tablespoons water. Heat over medium without stirring until the sugar dissolves and the mixture turns a deep amber color, gently swirling the pan occasionally. Watch carefully to avoid burning.

Once the caramel reaches a deep amber, remove from heat and carefully whisk in 2 tablespoons of the room-temperature butter until smooth. Slowly add 1–2 tablespoons of the heavy cream to loosen the caramel (mixture will bubble). Set aside to cool to warm (not hot).

In a large bowl, beat the remaining 14 tablespoons (1 cup) of room-temperature butter until pale and fluffy (about 3–4 minutes).

Once incorporated, add the cooled caramel, vanilla extract, remaining heavy cream (1/4 cup), and sea salt. Increase speed to medium-high and beat until very smooth and fluffy, about 2–3 minutes. Taste and adjust salt or caramel level if desired.

Decoration & Assembly

Level the cake layers with a serrated knife if domed. Place the first cake layer on a cake board or serving plate. Spread a 1/3-inch (about 3/4 cup) layer of the chilled midnight ganache evenly over the top, leaving a small 1/4-inch border to prevent squeeze-out.

Pipe or spread a thin dam of Titan Frosting around the ganache layer’s edge if you want extremely clean separation, then place the second cake layer on top. Repeat with another ganache layer and the third cake layer.
