Brisket Hot Dogs

    Prepare and warm brisket

    If your USDA brisket is pre-cooked or smoked, thinly slice it across the grain into short ribbons about 1/8–1/4" thick. If raw brisket is used, cook it first (smoke or braise until tender) — this recipe assumes pre-cooked brisket. Warm the sliced brisket in a skillet over medium-low heat with 1 tablespoon of water or a splash of beef stock for 3–5 minutes until heated through. Season lightly with 1/2 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper while warming.

    Cook the hot dogs

    Simultaneously, grill or pan-sear the hot dogs over medium-high heat, rotating until nicely browned on all sides, about 6–8 minutes total. Alternatively, poach in simmering water for 5 minutes then briefly sear in a hot pan for color.

    Toast buns

    Butter the inside of each hot dog bun (about 1/2 teaspoon butter per side). Toast buns in a skillet or on a griddle over medium heat until golden and crisp at the edges, about 1–2 minutes per side. Keep warm.

Peach Bourbon BBQ Sauce

    In a small saucepan over medium heat, combine 3 tablespoons peach preserves, 2 tablespoons bourbon, 1 cup ketchup, 2 tablespoons apple cider vinegar, 1 tablespoon brown sugar, 1 teaspoon Worcestershire sauce, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, and 1 teaspoon salt. Stir to combine.

    Bring the mixture to a gentle simmer, then reduce heat to low and cook, stirring occasionally, for 8–10 minutes until the sauce thickens and the flavors meld. If the sauce is thicker than desired, stir in up to 2 tablespoons water to loosen to a drizzling consistency.

    Taste and adjust seasoning — add more vinegar for brightness, more brown sugar for sweetness, or another splash of bourbon for depth (optional). Keep warm on the lowest heat, or transfer to a heatproof bowl and cover.

Ranch Drizzle

    In a small bowl, whisk together 1 cup prepared ranch, 2 tablespoons sour cream (if using), 1 tablespoon finely chopped chives, 1 teaspoon lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper until smooth.

    Taste and adjust seasoning. If you want a thinner drizzle, add 1–2 teaspoons water or milk. Transfer ranch to a squeeze bottle or small piping bag for easy drizzling over the finished dogs.

Toppings & Finish

    Assemble the Coney Island Dogs: Place a hot dog in each toasted bun. Pile a generous portion (about 2–3 tablespoons) of the warmed brisket slices alongside or on top of each hot dog so the meat crowds the bun.

    Drizzle about 1–2 tablespoons of the warm peach bourbon BBQ sauce over the brisket and hot dog on each bun, making sure to coat the meat so the fruity-bbq flavor is present with each bite.

    Dot or drizzle 1–2 teaspoons of yellow mustard across each dog (classic Coney flavor element). Spoon 1–2 teaspoons of pickle relish across the top, and sprinkle approximately 1–2 tablespoons finely diced yellow onion over each dog.
