    Remove any tough outer leaves from the green and red cabbages. Cut each cabbage into quarters, remove the core, then thinly slice across the grain to yield about 6 cups green cabbage and 2 cups red cabbage. Place in a large mixing bowl.

    Peel and shred carrots using a box grater or food processor until you have about 1 1/2 cups. Thinly slice 1 small red onion to yield 1/2 cup. Add both to the cabbage in the large bowl.

Dressing

    Whisk dressing

    In a medium bowl, combine 1/2 cup mayonnaise, 1/4 cup plain Greek yogurt, 2 tablespoons apple cider vinegar, 1 teaspoon Dijon mustard, 1 tablespoon honey, 1 teaspoon celery seed, and 1 teaspoon granulated sugar. Whisk until smooth.

    Add 3/4 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper to the dressing, whisk again, then taste.
