    Prep and dry

    Pat the wings completely dry with paper towels. Removing surface moisture helps them crisp.

    Coat with baking powder and seasoning

    In a large bowl, toss the wings with 1 tablespoon baking powder, 1 teaspoon kosher salt, and 1 teaspoon black pepper until evenly coated. The baking powder raises pH at the skin surface and helps browning and crispness.

    Rest

    Place the wings on a wire rack set over a rimmed baking sheet and refrigerate, uncovered, for 30–60 minutes if time allows. This further dries the skin for better crisping (optional but recommended).

    Oven roasting (crisp method)

    Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with foil and set a wire rack on top. Arrange wings in a single layer on the rack, leaving space between pieces. Roast in the preheated oven for 35–45 minutes, turning once halfway through, until skin is deep golden-brown and crisp and an instant-read thermometer reads 165°F (74°C) in the thickest part. For extra crispness, broil on high for 2–3 minutes at the end, watching closely to avoid burning.

    Alternative: Deep-fry

    Heat 2–3 inches of neutral oil (vegetable, canola) in a heavy pot to 375°F (190°C). Fry wings in batches 6–8 minutes until golden-brown and crisp. Drain on paper towels. Frying yields slightly different texture but still excellent results.

Buffalo sauce

    Melt butter

    While the wings finish cooking, combine 4 tablespoons unsalted butter in a small saucepan over low heat until melted. Do not let it brown.

    Blend sauce

    Remove saucepan from heat and whisk in 1 cup hot sauce, 1 teaspoon white vinegar, 1 teaspoon Worcestershire sauce, 1 teaspoon sugar (or honey), 1 teaspoon garlic powder, and 1/2 teaspoon salt until smooth and emulsified. Taste and adjust heat or salt as desired. Keep warm over very low heat or transfer to a heatproof bowl.

    Alternative microwave method

    Combine butter and hot sauce in a microwave-safe bowl and heat in 20-second intervals, stirring between, until butter is melted and sauce is combined.

Tossing & serving

    Toss wings in sauce

    Place the hot wings in a large clean bowl. Pour most of the warm Buffalo sauce over the wings (reserve 2–3 tablespoons if you want some on the side). Toss vigorously until wings are evenly coated.

    Plate and finish

    Arrange sauced wings on a platter. Sprinkle with chopped parsley if using. Serve immediately with celery and carrot sticks and blue cheese or ranch dressing on the side for dipping.

    If making ahead, keep wings and sauce separate. Reheat wings in a 400°F (205°C) oven for 8–10 minutes to crisp, then toss with warmed sauce just before serving.
