Muddle
Add the fresh spearmint leaves (reserve 1 small sprig for garnish) to the glass with the squeezed lime. Add the simple syrup. Gently muddle the mint and lime together 6–8 times: press to bruise leaves and release oils but avoid shredding them, which can make the drink bitter.

Add spirits and ice
Pour 2 oz Agwa de Bolivia over the muddled mint and lime. Add crushed ice to fill the glass about three-quarters full (approximately 1 cup crushed ice).

Build and top
Add the fresh lime juice (0.75 oz) if you didn't extract enough from the wedge earlier. Stir gently 6–8 times with a bar spoon to combine liqueur, syrup, lime and mint through the ice. Top with 2.5 oz club soda, pouring slowly to preserve effervescence.

Give the drink one gentle up-and-down lift with the spoon to integrate the soda without losing fizz. Slap the reserved mint sprig between your palms once to release aromatics and place it on top of the drink as garnish. Add the lime wheel or extra wedge onto the rim.

If desired, add 1 dash Angostura bitters on top of the foam for aromatic contrast. Serve with a short straw or stirrer and enjoy immediately while cold and fizzy.
