Sliders (makes 3)

Method

Sliders (makes 3)

  1. 1

    Prepare patties

Place the 12 oz ground beef in a bowl. Add 1 tablespoon Worcestershire sauce, 1 teaspoon salt, and 1/2 teaspoon black pepper (from the listed 3 tsp salt / 1 tsp pepper — the remaining salt is for fries). Gently mix with your hands until just combined; avoid overworking. Divide the meat into 3 equal portions (about 4 oz each). Form each into a flat round patty slightly larger than the slider bun, about 1/2" thick. Make a shallow dimple in the center of each patty with your thumb to reduce puffing while cooking.

  2. 2

    Toast buns

Heat a skillet or griddle over medium heat. Lightly butter the cut sides of the 3 slider buns with the softened butter. Place buns cut-side down on the skillet until golden brown, about 1–2 minutes. Remove and set aside.

  3. 3

    Cook patties

Increase heat to medium-high and add a light swipe of oil if your skillet is dry. Place the patties in the hot skillet and cook 2–3 minutes without moving to develop a crust. Flip and cook another 2–3 minutes for medium doneness (adjust 1–2 minutes if you prefer rarer or more well done). In the last 30–45 seconds of cooking, place a cheddar slice on each patty and cover the skillet briefly to melt the cheese.

  4. 4

    Assemble sliders

Spread 1 teaspoon mayonnaise on the bottom half of each toasted bun. Place one lettuce leaf on the mayo, then the cheeseburger patty, 2 tomato slices (stacked or single depending on slice size), and 2 red onion rings. Top with the bun crowns. Serve immediately alongside the fries.

Fries

  1. 5

Preheat oven according to package instructions (typically 425°F / 220°C). Spread the frozen fries on a baking sheet in a single layer. Toss with 2 tablespoons vegetable oil, 1 teaspoon salt, and 1/2 teaspoon black pepper. Bake until golden and crisp, typically 18–25 minutes, flipping halfway through. Remove and keep warm until sliders are ready.

  2. 6

    If using hand-cut potatoes

Preheat oven to 425°F (220°C). Wash and cut russet potatoes into 1/4–1/2" fries; soak in cold water 20–30 minutes, then drain and pat very dry. Toss with 2 tablespoons vegetable oil, 1 teaspoon salt, and 1/2 teaspoon black pepper. Spread in a single layer on a baking sheet and bake 30–40 minutes, turning once, until golden brown and crisp. Alternatively, deep-fry in oil at 350°F (175°C) in batches for 3–5 minutes until golden, then drain on paper towels and season with remaining salt and pepper to taste.
