Baked Ravioli

Method

Roasted Red Pepper Sauce

    Sauté aromatics

    Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the chopped onion and a pinch of salt; sauté until translucent, about 6–8 minutes. Add the minced garlic and cook 30–60 seconds until fragrant.

    Blend peppers

    Place the roasted red peppers in a blender or food processor with the tomato paste and 1/4 cup of the broth. Purée until smooth.

    Simmer sauce

    Add the pepper purée to the skillet with the onions. Stir in the remaining 3/4 cup broth, heavy cream, 1 teaspoon salt, 1/2 teaspoon black pepper, and red pepper flakes if using. Bring to a gentle simmer, reduce heat to low, and cook 6–8 minutes to marry flavors and slightly thicken. Taste and adjust seasoning. Remove from heat.

    Finish

    If you prefer an extra-smooth sauce, return the mixture to the blender and pulse once more. Keep warm until assembly.

Baked Ravioli

    Preheat and prepare baking dish

    Preheat the oven to 375°F (190°C). Lightly oil a 9x13-inch baking dish with 1 tablespoon olive oil.

    Assemble ravioli

    Place the ravioli in a single even layer in the prepared dish. Pour the warm roasted red pepper sauce evenly over the ravioli so they are mostly covered. Sprinkle 1 cup of shredded mozzarella and 1/2 cup grated parmesan over the top. Season lightly with the 1 teaspoon salt and 1 teaspoon black pepper divided across the dish if additional seasoning is desired.

    Bake

    Cover the baking dish with foil and bake for 15 minutes. Remove the foil and bake an additional 10–12 minutes until the cheese is bubbly and the top is lightly golden.

    Finish and garnish

    Remove from oven and let rest 5 minutes. Sprinkle the remaining 1 cup mozzarella and remaining 1/2 cup parmesan over the top (if you prefer a very cheesy top, add before final 10–12 minute bake instead). Garnish with sliced fresh basil if using. Serve hot with garlic bread.

Garlic Bread

    Prepare garlic butter

    Preheat oven to 375°F (use same oven as ravioli; adjust timing so both finish together). In a small bowl, mix the softened butter with minced garlic, chopped parsley, 1/4 teaspoon salt, and 2 tablespoons grated parmesan until combined.

    Assemble and bake

    Slice the baguette lengthwise or into 1-inch slices. Spread the garlic butter evenly over cut sides. Place on a baking sheet and bake 8–10 minutes until butter is melted and edges are crisp. For a browned top, broil 1–2 minutes watching closely.

    Serve

    Remove from oven, let cool 1–2 minutes, then slice (if not pre-sliced) and serve alongside the baked ravioli.
