Prepare Mushrooms

    Clean and trim

    Wipe mushrooms with a damp paper towel or soft brush to remove dirt. Trim stems flush with caps if needed. Pat dry with paper towels. Leave whole for button mushrooms or halved if larger cremini so pieces are roughly bite-sized.

    Place cleaned mushrooms in a single layer on a plate and refrigerate while you prepare the batter so excess moisture firms up slightly (5–10 minutes).

Make Batter

    Mix dry ingredients

    In a medium bowl, whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, and 1/2 tsp paprika until evenly combined.

    Add wet ingredients

    Create a well in the dry mix, add the beaten egg, then slowly whisk in cold sparkling water (or ice water). Add approximately 3/4 cup (see note) until the batter is smooth and has the consistency of heavy cream — it should coat the back of a spoon but still be fluid enough to drip. Do not overmix; a few small lumps are fine. Keep batter cold until frying (place bowl over an ice bath if warm kitchen).

    Note: Using sparkling water lightens the batter. Adjust liquid slightly if mushrooms are large; batter should cling but not be excessively thick.

Dredge and Fry

    Heat oil

    Pour oil into a heavy-bottomed pot or deep fryer to a depth of about 2 inches (about 2 cups for a small pot). Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small dollop of batter — it should sizzle and float up, browning in about 45–60 seconds.

    Dredge mushrooms

    Place 1/2 cup flour in a shallow bowl. Working in batches, toss mushrooms lightly in the flour to dry their surface. Shake off excess flour. Then dip each floured mushroom into the cold batter, letting excess batter drip off for a second so coating isn’t overly thick.

    Fry

    Carefully lower battered mushrooms into the hot oil without overcrowding (4–6 pieces per batch depending on pot size). Fry, turning once if needed, until golden brown and crisp, about 2.5–3.5 minutes per batch depending on size. Use a slotted spoon or spider to remove mushrooms to a wire rack set over a baking sheet (not paper towel — rack keeps coating crisp).

    Drain and season

    While still hot, sprinkle a light pinch of salt over the mushrooms to taste. Allow to rest 1–2 minutes on the rack so excess oil drains and coating firms.

Serve

    Transfer mushrooms to a serving platter. Garnish with chopped parsley and serve immediately with lemon wedges and your chosen dipping sauce on the side.

    Leftover mushrooms can be reheated in a 375°F (190°C) oven for 6–8 minutes to re-crisp, but they are best enjoyed fresh.
