Rosso (Red) Layer

Method

Rosso (Red) Layer

  1. 1

    Build and chill the Rosso

Add sweet vermouth, Campari, maraschino liqueur and orange bitters into a mixing glass. Fill the mixing glass with the indicated ice cubes and stir briskly for 20–30 seconds until well chilled and slightly diluted (about a 20% reduction in temperature).

  2. 2

    Strain

Strain the red mixture into a chilled coupe or rocks glass, filling it to a little less than half full (about 2–2.25 oz). Leave room for the Bianco layer above.

Bianco (White) Layer

  1. 3

    Prepare the Bianco

In a separate mixing glass, combine dry vermouth, gin and elderflower liqueur (if using) with the indicated ice cubes. Stir gently for 15–20 seconds until well chilled and slightly diluted.

  2. 4

    Float the Bianco

Using the back of a bar spoon held just above the Rosso layer, slowly pour the Bianco mixture over the spoon so that it floats on top of the Rosso layer. Aim to add about 1.5 oz so the drink has a clear red lower layer and a pale, nearly translucent upper layer.

Finishing & Serving

  1. 5

    Garnish and optional aromatics

Express the orange peel over the drink by pinching it to release oils, then rub the peel around the rim and drop it into the drink. Add the lemon twist or thin lemon wheel on the rim or floated between layers for a bright visual contrast. If you like a touch more complexity, add a single dash of aromatic bitters on top of the Bianco layer—this will sit lightly on the surface and gradually weave into the drink.

  2. 6

    Serve

Serve immediately while layers are distinct and chilled. Advise guests to sip vertically to experience the transition from Bianco to Rosso, or gently stir if they prefer a harmonized flavor.
