Broccolini & Seasoning

Method

Broccolini & Seasoning

  1. 1

    Preheat and prepare broccolini

Preheat the oven to 425°F (220°C). Rinse 1 lb broccolini and pat dry thoroughly with paper towels. Trim the tough ends (about 1/2 inch) and remove any yellowed leaves; leave small florets whole.

  2. 2

    Toss with oil and aromatics

Place the trimmed broccolini in a large bowl. Add 2 tbsp extra-virgin olive oil, 2 cloves minced garlic, 1 tsp fine sea salt, 1 tsp freshly ground black pepper, and 1 tsp crushed red pepper flakes if using. Toss well so each stalk is evenly coated.

  3. 3

    Arrange on baking sheet

Spread the broccolini in a single layer on a rimmed baking sheet lined with parchment paper or lightly oiled. Arrange stems in the same direction and avoid overcrowding so they roast rather than steam.

  4. 4

    Roast

Roast in the preheated oven on the middle rack for 12–16 minutes, turning once halfway through. Roast until the stems are tender when pierced with a knife and the florets and tips are browned and slightly crisp. Thinner stalks may take 12 minutes; thicker heads up to 16 minutes.

Finishing

  1. 5

    Dress and serve

Remove the broccolini from the oven. Immediately transfer to a serving platter. Zest 1 lemon over the hot vegetable, then squeeze about 1–2 tbsp lemon juice to taste. Sprinkle 2 tbsp grated Parmesan or Pecorino and 2 tbsp toasted sliced almonds or pine nuts if using. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.

  2. 6

    Optional crisp garlic finish

If you prefer a crisp garlic finish, heat 1 tbsp olive oil in a small skillet over medium heat, add 1 clove thinly sliced garlic and cook until golden (30–60 seconds), then drizzle over the broccolini just before serving.
