Pistachio Cake

Pistachio Cake

    Prepare oven and pans

    Preheat oven to 350°F (175°C). Grease and line a 8-inch round cake pan (or 6 riffled tart rings) with parchment. If you plan to portion into small rounds, use a ring or muffin tin accordingly.

    Dry ingredients

    Whisk together the all-purpose flour, ground pistachios, baking powder, and salt in a medium bowl until evenly combined.

    Cream butter and sugar

    In a stand mixer fitted with a paddle (or using a hand mixer), cream the softened butter and granulated sugar on medium-high speed for about 2–3 minutes until pale and fluffy.

    Incorporate eggs and flavor

    Add the eggs one at a time, mixing well after each addition. Scrape the bowl and mix in the vanilla extract and pistachio paste (if using).

    Combine batter

    With the mixer on low, add one third of the dry ingredients, then half the milk, another third of dry, the remaining milk, and finish with the last third of dry ingredients. Mix just until combined—do not overmix.

    Bake

    Scrape the batter into the prepared pan, smoothing the top. Bake 22–28 minutes for an 8-inch pan (or until a toothpick inserted in center comes out with a few moist crumbs). Cooling times vary with pan size.

    Cool

    Remove cake from oven and let rest in pan 10 minutes, then turn out onto a wire rack to cool completely. If making small rounds for assembly under the dome, cut into rounds or bake in ring molds for even sizes. Reserve.

Lemon Custard

    Heat dairy

    Combine whole milk and heavy cream in a medium saucepan and warm over medium heat until just simmering (bubbles form at edge). Remove from heat.

    Mix eggs and thickeners

    Whisk together the egg yolks, granulated sugar, and cornstarch in a bowl until pale and slightly thickened.

    Temper eggs

    Slowly pour about 1/3 of the hot milk mixture into the egg mixture in a steady stream while whisking constantly to temper. Then pour the tempered egg mixture back into the saucepan with the remaining milk mixture, whisking continually.

    Cook custard

    Return saucepan to medium-low heat and cook, whisking constantly, until the mixture thickens and comes to a gentle boil (about 2–4 minutes). Continue to cook 30–60 seconds while whisking to activate cornstarch.

    Finish flavoring

    Remove from heat and immediately whisk in the lemon juice, lemon zest, and cold cubed butter until smooth and glossy. Taste and adjust lemon or sugar as desired.

    Chill

    Transfer custard to a shallow container and press plastic wrap directly onto the surface to prevent a skin. Chill in the refrigerator until fully set and cold, at least 2 hours. For assembly, bring to slightly soft spreadable texture by resting 10–15 minutes at room temperature if very firm.

White Chocolate Dome (Cupola)

    Temper or melt white chocolate

    Chop chocolate if using bars. Melt white chocolate gently in a double boiler or in short bursts (20–30 seconds) in the microwave, stirring between intervals. If desired, stir in 1 tsp coconut/neutral oil to loosen the chocolate for easier coating and a glossier finish. Keep melted chocolate warm but not hot (about 86–90°F / 30–32°C).

    Form dome shells

    Use silicone hemisphere molds (3–4 inch diameter depending on desired cupola size). Brush or pour a thin, even layer of melted white chocolate into each hemisphere, working quickly to cover walls fully. Place molds in the refrigerator for 5 minutes to set, then apply a second thin layer to ensure a sturdy shell. Chill until fully set, about 15–20 minutes. Gently unmold the white chocolate hemispheres.

    Optional shine

    If you want extra shine, briefly warm the outside of the unmolded shells with a warm plate or hair dryer on low to smooth surface. Handle shells carefully—white chocolate is fragile when thin.

Assembly & Garnish

    Prepare cake bases

    If you baked a full cake, cut the cooled pistachio cake into rounds slightly smaller than the interior diameter of the white chocolate hemispheres. If using ring-baked cakes, trim to fit. Lightly brush the cut top of each cake round with a thin syrup (optional) to moisten.

    Fill and stack

    Place one cake round into each white chocolate hemisphere. Pipe or spoon a generous portion (about 2–3 tablespoons) of chilled lemon custard on top of the cake, smoothing to the dome edge but leaving a little space so the dome rim can close if you plan to seal them.

    Seal dome (optional)

    If you want a full enclosed cupola, gently warm the rim of the opposite hemisphere and place it on top of the filled hemisphere to create a sealed dome. Press lightly to adhere. Alternatively, leave as half-dome open-faced for presentation.

    Garnish

    Dust each finished cupola with a light sift of powdered sugar, sprinkle chopped pistachios around the base or on top, and add a small twist of lemon zest and a mint leaf for color. Chill briefly to set seams if sealed, about 15–20 minutes.

    Serve

    Serve chilled or at cool room temperature. If sealed, gently crack the white chocolate dome at the table for dramatic presentation or serve whole. Best enjoyed within 24 hours for optimal texture.
