Roasted Brussels Sprouts
Prep
Preheat oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or foil for easier cleanup.
Trim and halve
Trim the stem ends of the brussels sprouts and remove any loose or yellowed outer leaves. Cut each sprout in half lengthwise so cut side will face down on the pan.
Toss with oil and seasonings
In a large bowl, toss the halved sprouts with the olive oil, kosher salt, and black pepper until evenly coated.
Arrange on sheet
Spread the sprouts cut-side down in a single layer on the prepared baking sheet, leaving a little space between them for even browning.
Roast
Roast in the preheated oven for 18–22 minutes, until the cut sides are deep golden brown and the outer leaves are crisp. Shake the pan or stir once halfway through roasting to promote even browning (around 10–12 minutes).
Finishing & Garnish
Finish
Remove the baking sheet from the oven. While the sprouts are hot, drizzle the lemon juice over them and sprinkle the grated Parmesan. Toss gently on the pan or transfer to a serving bowl so the cheese melts slightly and the lemon brightens the flavor.
Add crunch and spice
Scatter the toasted sliced almonds over the sprouts and finish with a light sprinkle of red pepper flakes to taste. Adjust salt and pepper if needed.
Serve
Serve immediately while hot and crisp as a side dish.
