Inspect and rinse
Place all berries in a colander. Discard any soft, moldy or bruised pieces. Rinse gently under cool running water for about 20–30 seconds while shaking the colander to ensure even washing. Drain thoroughly for 1–2 minutes.

Prep strawberries
If using strawberries, trim the green tops and hull with a small paring knife and cut larger berries into halves or quarters so their pieces are roughly the same size as the other berries. Leave smaller strawberries whole.

Transfer the drained berries to a mixing bowl. Handle gently to avoid crushing delicate raspberries and blackberries.

Dress the berries
In a small bowl or measuring cup combine the fresh lemon juice and honey or maple syrup. Stir until the honey dissolves. Drizzle this mixture over the berries and gently toss with two large spoons to coat evenly. Taste and add an additional 1/2 teaspoon honey if you prefer sweeter.

Let the dressed berries sit at room temperature for 5–10 minutes to allow flavors to marry and juices to meld. This also slightly macerates the fruit without making it soggy.

Just before serving, sprinkle the lemon zest over the berries and scatter the mint leaves on top. If you like a little sparkle, lightly dust the berries with the coarse sugar for texture. Serve in individual bowls or a single serving bowl.
