Prep Jalapeño Saline

Make saline infusion

In a small bowl or jar, muddle the sliced jalapeño with 2 tbsp water until the pepper releases some juice and aroma. Add 1 tsp fine sea salt and stir until partly dissolved. If you want a touch more sweetness to round the heat, stir in 1/2 tsp agave. Let sit for 5–10 minutes to infuse, then strain through a fine mesh sieve into a small container, pressing on solids to extract liquid. Reserve the clear jalapeño saline (about 1–2 tbsp) and discard solids.

Prepare Watermelon Juice

If you don't have ready watermelon juice: cube chilled seedless watermelon and blend until smooth. Strain through a fine mesh sieve to remove pulp for a silky texture. Measure 3 oz (approximately 1/3 cup) per cocktail.

Assemble Cocktail

Chill a rocks or coupe glass. Rub a lime wheel around the rim, then dip the rim lightly into coarse salt to coat.

Shake

In a cocktail shaker, add 2 oz tequila, 3 oz fresh watermelon juice, 1 oz fresh lime juice, 1/2 oz triple sec, 1/2 oz simple syrup, and 1/2–1 tsp (adjust to taste) of the prepared jalapeño saline. Fill the shaker with ice and shake vigorously for 12–15 seconds until well chilled.

Double-strain the mixture into the prepared glass over fresh ice (or serve neat in a chilled coupe).

Finish & Garnish

Express lemon wisps: use a vegetable peeler or small knife to slice thin strips of lemon peel. Hold a strip over the cocktail and twist to release the oils, then sweep the peel across the surface so a faint, bright lemon aroma sits on top. Optionally float the twisted peel or rest a lime wheel on the rim.

Taste and adjust: if the drink needs more heat, add a few drops of jalapeño saline; if it needs more balance, add 1/4 oz simple syrup or a splash more lime. Serve immediately.
