Prepare strawberry purée
If you don't have pre-made purée, hull and halve 2 medium strawberries. Blend until smooth and strain through a fine mesh if you prefer a silkier texture. Measure 1 oz for the recipe.
Dry shake (if using egg white)
In a cocktail shaker, add 2 oz gin, 1 oz fresh strawberry purée, 0.5 oz fresh lemon juice, 0.5 oz stone fruit liqueur, 0.5 tsp simple syrup and 0.5 egg white (if using). Seal and dry shake (no ice) vigorously for 15–20 seconds to emulsify and build foam.
Wet shake
Add a generous handful of ice to the shaker (about 4–6 cubes). Shake hard for 10–15 seconds until the shaker is cold to the touch and well-chilled.
Double strain into glass
Double strain the shaken mixture into a chilled highball or Collins glass filled halfway with fresh ice using a Hawthorne strainer and fine mesh strainer to remove fruit solids and ice shards.
Top / Finish
Top with 2 oz dry soda (club soda or soda water). Pour slowly to preserve the foam and create a light sparkling layer.
Serve immediately with a short stir (one gentle turn) if needed to integrate the soda. The finished cocktail should showcase gin clarity, bright strawberry and lemon, a hint of stone-fruit aroma from the liqueur, and a dry fizzy finish.
