Prepare Cocktail Base

Combine and shake

In a cocktail shaker add the rye whiskey (or bourbon), fresh lemon juice, simple syrup, and the egg white if using. Dry shake (no ice) vigorously for 15 seconds to emulsify the egg white and create foam.

Cold shake

Add plenty of ice to the shaker and shake vigorously for another 15–20 seconds until the shaker is well chilled and slightly frosty on the outside.

Strain & Serve

Double strain into glass

Double strain the mixture (using the shaker strainer and a fine mesh strainer) into a chilled old-fashioned (rocks) glass filled with one large ice cube or several medium ice cubes. The egg-white foam should sit on top of the whiskey mixture.

Wine Float & Garnish

Float the wine

Using the back of a bar spoon held just above the surface of the foam (or pour very gently), slowly float the red wine over the top. Aim for about 0.5 oz so the wine creates a distinct floating layer that will ripple slightly into the foam and create the signature look and flavor separation.

Garnish

Finish with a lemon twist or thin lemon wheel rested on the foam edge. Serve immediately.
