Omelet base
Crack the eggs into a medium bowl. Add the milk, salt, and black pepper. Whisk vigorously until the mixture is homogenous, slightly frothy, and pale yellow (about 30–45 seconds). This adds air for a light omelet.
Grate the Gruyère and set aside in a small bowl so it's ready when the omelet is nearly set.
Cooking the omelet
Preheat pan
Place a nonstick 8- to 10-inch skillet over medium-low heat. Add the unsalted butter and let it melt, swirling to coat the bottom. The butter should foam but not brown.
Using a silicone spatula, stir the eggs gently in the center for 10–15 seconds to break up large curds, then stop stirring and let the eggs set around the edges. As the edges set, tilt the pan and push the set edges toward the center while tilting again to let uncooked egg run to the sides. Continue this motion until the surface is mostly set but still slightly glossy and a touch soft on top (about 1½–2 minutes total).
When the eggs are nearly set but still slightly creamy on top, sprinkle the grated Gruyère evenly over one half of the omelet. If using ham or prosciutto, lay the slices over the cheese, slightly overlapping.
Sprinkle the minced chives over the cheese (and ham, if added).
Fold the empty half of the omelet over the filled half using the spatula to create a semi-circle. Let cook for another 20–30 seconds to melt the cheese and finish setting the center — the interior should remain moist but not runny.
Carefully slide the omelet onto a warmed plate, seam-side down. If you prefer a lightly browned exterior, after folding, tilt the pan over medium heat for 10–15 seconds to lightly color the bottom before plating.
To serve
Garnish the omelet with a few extra snips of chives and freshly ground black pepper. Serve immediately with the side salad and bread if desired.
