Method
Duck
Season and roast
Rub the duck skin with 1 tablespoon olive oil and season the cavity and skin with 2 tablespoons kosher salt and 1 teaspoon freshly ground black pepper. Place the duck breast-side up on a rack in a roasting pan. Roast for about 1 hour 15 minutes to 1 hour 30 minutes (about 20 minutes per pound), until the skin is deep golden and an instant-read thermometer in the thickest part of the thigh reads 165°F (74°C). Every 25–30 minutes, carefully spoon off excess fat from the pan into a heatproof container for other uses. If skin browns too quickly, tent loosely with foil.
Rest
Remove duck from oven and let rest on a cutting board for 10–15 minutes, tented loosely with foil, before carving. Reserve pan juices for finishing sauce if desired (strain and skim fat).
Orange Gastrique
Make caramel
In a small saucepan over medium heat, add 3 tablespoons granulated sugar. Cook undisturbed until the sugar begins to melt and turns an amber color, swirling the pan occasionally — about 5–7 minutes. Watch carefully to avoid burning.
Deglaze
Immediately and carefully add 60 ml white wine vinegar to the caramel (it will steam vigorously). Stir to dissolve any hardened sugar. Add the orange zest and 180 ml fresh orange juice and 120 ml chicken or duck stock. Bring to a gentle simmer.
Reduce and finish
Simmer until the mixture reduces by about one-third and is syrupy — roughly 8–12 minutes. Stir in 30 g unsalted butter, 1 teaspoon soy sauce, and 1 sprig thyme (if using). Season to taste with 1 teaspoon salt and 1/2 teaspoon black pepper. Keep warm and strain if you prefer a smooth sauce. If you reserved duck pan juices, you may whisk in up to 60 ml strained pan juices to deepen flavor; adjust seasoning and volume by simmering briefly.
Smoked Carrot
Prepare carrots
Toss the peeled carrot batons with 1 tablespoon olive oil, 1 teaspoon smoked paprika, 1 teaspoon maple syrup, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated.
Cook carrots
Two options: Oven-roast: spread carrots on a sheet pan and roast in the oven at 375°F (190°C) alongside the duck for 18–22 minutes until tender and slightly caramelized. Stovetop smoked flavor: heat a small cast-iron pan over medium-high heat, add carrots and 1 tablespoon water, cover and cook 6–8 minutes until tender, then finish uncovered to caramelize. For extra smoke, sprinkle a few drops of liquid smoke or use a smoking gun for a brief pass. Keep warm for plating.
Shaved Fennel Salad
Assemble salad
Very thinly slice the fennel bulb (use a mandoline or sharp knife). Combine sliced fennel with 1 diced or segmented orange in a bowl. Dress with 2 teaspoons extra-virgin olive oil, 1 teaspoon sherry or white wine vinegar, 1/4 teaspoon salt and 1/4 teaspoon black pepper. Toss gently and let sit 5–10 minutes to soften slightly. Finish with 1 tablespoon chopped chives or microgreens if using.
Finish & Serve
Carve and glaze
Carve the rested duck into breasts and legs. Lightly reheat the orange gastrique to a glossy sauce consistency. Spoon some gastrique over the carved duck pieces to glaze, and place additional sauce on the plate.
Plate
Arrange duck pieces on each plate with a portion of smoked carrots and a small mound of shaved fennel salad. Garnish with orange segments or a little zest and a sprig of thyme. Serve immediately.
