Omelet filling
Prepare and cook vegetables and ham
Heat a 10-inch nonstick or well-seasoned skillet over medium heat. Add the oil and once shimmering, add the diced onion and bell pepper. Sauté, stirring occasionally, for 3–4 minutes until softened and starting to brown at the edges. Add the diced smoked ham and continue to cook for 1–2 minutes to warm and lightly brown the ham. Season the mixture with 1/4 tsp salt and 1/8 tsp black pepper. Transfer the cooked filling to a plate and set aside.
Eggs & finishing
Beat the eggs
In a medium bowl, crack the 3 large eggs. Add 1 tablespoon milk or water, 1/4 tsp salt, and 1/8 tsp black pepper. Whisk vigorously until the mixture is uniform and slightly frothy (about 20–30 seconds).
Cook the omelet
Add the butter to the warmed skillet and swirl to coat as it melts, making sure the heat is low–medium (but not high). Pour the beaten eggs into the skillet and let them sit undisturbed for 10–15 seconds until the edges begin to set. Using a silicone spatula, gently pull the set edges toward the center while tilting the pan to let uncooked egg run to the edges. Continue this gentle agitation for 45–60 seconds until the eggs are mostly set but still slightly glossy on top.
Add filling and finish
Evenly distribute the reserved ham-vegetable mixture across one half of the omelet. Sprinkle the shredded cheddar on top of the filling. Let cook another 20–30 seconds so the cheese starts to melt and the eggs finish setting (reduce heat if browning too quickly). Using the spatula, fold the empty half of the omelet over the filling to make a half-moon. Let cook for 10–15 more seconds to ensure warmed through.
