Measure spirits
Measure out the vanilla vodka, spiced rum, and optional butterscotch schnapps into a small pourer or jigger so they’re ready when you assemble the floats.
Assembling the Floats
Add two scoops of vanilla ice cream to each glass. Pack them gently so they sit just below the rim but leave room for the foam from the soda.
Divide the measured spirits between the two glasses: pour 1 fl oz vanilla vodka into each glass, then pour 0.5 fl oz spiced rum into each. If using butterscotch schnapps, add 0.25 fl oz to each glass. Gently spoon alcohol around the ice cream to avoid excessive foaming when the soda is added.
Slowly pour 12 fl oz chilled root beer into each glass down the side, aiming to minimize overflow. Pour in two stages: fill about half, let foam settle for 10–15 seconds, then finish filling to just below the rim.
If the foam is high, wait a few seconds for it to subside before topping with the second glass of ice cream (if you prefer more ice cream) or proceeding to garnish.
Finishing Touches
Top each float with about 1 tablespoon whipped cream, if desired, and place a maraschino cherry on top. Sprinkle the crushed chocolate or an extra drizzle of caramel/chocolate sauce if using.
Insert a straw and a long spoon. Serve immediately while fizzy and cold. Advise guests to stir gently if they want a more boozy drink rather than a dessert.
