1. Prepare glass
Chill an old-fashioned or rocks glass in the freezer for 5–10 minutes, or fill with ice and set aside to cool while you assemble the cocktail.
2. Build the cocktail
Into a mixing glass or cocktail shaker filled with ice, pour 0.75 oz bourbon, 0.5 oz ruby port, 0.25 oz orange liqueur, 0.25 oz simple syrup, and 2 dashes Angostura bitters. Stir briskly for about 15–20 seconds until well chilled and lightly diluted.
3. Add Cabernet
Discard the ice from the chilled serving glass. Strain the stirred spirit mixture into the serving glass over a large ice cube (or fresh ice). Top gently with 6 oz chilled Guinigi Cabernet (or comparable full-bodied Cabernet Sauvignon). Stir once or twice gently to combine — you want integration but not too much loss of the wine's aromatics.
4. Garnish and serve
Express an orange peel over the drink by holding it skin side down and giving it a firm twist to release oils, then run the peel around the rim and drop it into the glass. Serve immediately.
5. Optional: If you prefer a slightly sweeter or more fortified profile, increase the port to 0.75 oz and reduce the Cabernet to 5.5 oz. For a lighter mouthfeel, use 4–5 oz Cabernet and serve in a wine glass without ice.
