Preparation

Wine

1. Storage before serving

Store the Finca El Origen Malbec upright in a cool, dark place with a consistent temperature (ideally 55–65°F / 13–18°C). Keep away from direct light and heat sources until you're ready to open.

2. Chill briefly (optional)

If the bottle has been stored at room temperature above 70°F (21°C), place it in the refrigerator for 20–30 minutes before serving. Malbec is best served slightly below room temperature (about 60–65°F / 15–18°C). Do not over-chill — avoid long refrigeration that mutes aromas.

3. Opening the bottle

Use a waiter’s corkscrew. Cut the capsule just below the lip, wipe the top of the cork with a clean cloth, insert the screw into the centre of the cork and gently pull using the levers until the cork is removed. Avoid twisting violently to keep cork pieces out of the wine.

4. Decanting (optional)

For a younger or robust Malbec, pour the wine slowly into a decanter and let it breathe for 20–45 minutes. Decanting helps soften tannins and release aromas. For an older bottle, decant carefully and stop when you see sediment reach the neck.

5. Pouring

Hold the glass by the stem and pour about 4–6 oz (120–180 ml) per glass, filling to the widest part to allow swirling. Fill no more than half the glass to allow aroma concentration.

6. Tasting and serving

Swirl the wine gently, inhale to appreciate primary fruit (black cherry, plum), secondary notes (vanilla, spice) and tertiary notes if present. Take a small sip, let it coat your palate, note acidity, tannin, and finish. Refill as desired; keep remaining bottle on the table or re-cork and store upright if consuming within 1–2 days.

Glassware & pairings

7. Prepare glassware

Ensure red wine glasses are clean and free of detergent residue. Warm glasses in your hands for a moment if the room is cool, but avoid warming the wine itself.

8. Arrange pairings

On a small board or plate, arrange slices of aged cheese and cured meats with crusty bread or crackers. Break dark chocolate into squares and place nearby. These pairings complement Malbec’s fruit, spice and tannin structure.

9. Serving with food

Taste the wine between bites of cheese, meat, or chocolate to experience how flavors interact. Heavier cheeses and savory cured meats typically pair well; chocolate can highlight fruit and cocoa notes in the wine.

10. Storing leftover wine

If you have leftover bottle, re-cork it with the original cork or a wine stopper and store upright in a cool, dark place or refrigerate (briefly) to slow oxidation. Consume within 2–3 days for best quality; expect gradual loss of fresh fruit aromas after the first day.
