In a small saucepan, heat the milk and 4 tablespoons butter until butter is melted and milk is warm (do not boil). Stir in sour cream.

Warm a medium sauté pan over medium heat and add 1 tablespoon unsalted butter. Add minced shallot and sauté until translucent, about 2–3 minutes; do not brown.

Add white wine and vermouth, increase heat to medium-high and reduce by about half, about 2–3 minutes, scraping up any fond.

Add chicken stock and bring to a gentle simmer. Reduce by one-third, approximately 4–6 minutes.

Lower heat to medium-low and add the heavy cream. Stir and simmer gently until sauce thickens slightly, about 4–6 minutes.

Stir in Dijon mustard, Worcestershire sauce, lemon juice, fine sea salt, and black pepper. Taste and adjust seasoning.

Fold in the jumbo lump crab meat gently, warming through for 1–2 minutes—avoid stirring aggressively to keep lumps intact.

Off heat, swirl in the 2 tablespoons of cold cubed butter, one piece at a time, to finish and slightly thicken the sauce (monte au beurre). Keep warm on the lowest heat or in a warm spot.

Finish with thinly sliced chives and a light additional crack of black pepper before plating.
Asparagus

Preheat oven to 425°F (220°C) or heat a large skillet over medium-high heat if pan-searing.

Toss trimmed asparagus with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper.

If roasting: spread asparagus in a single layer on a rimmed baking sheet and roast 8–10 minutes until tender-crisp and slightly browned. If pan-searing: cook in a hot skillet in a single layer, turning occasionally, about 6–8 minutes until tender-crisp.

Finish with a squeeze of lemon juice from the wedge just before plating.
Steak

Remove filets from refrigerator 30–45 minutes before cooking to come to room temperature; pat dry with paper towels.

Season both sides generously with kosher salt and freshly ground black pepper.

Heat a heavy skillet (cast iron preferred) over high heat until very hot. Add 2 tablespoons neutral oil and swirl to coat.

Tilt the pan and spoon melted butter and aromatics over the steaks (baste) for an additional 1–2 minutes. For medium-rare aim for internal temperature 125–130°F (52–54°C); adjust time for desired doneness (use an instant-read thermometer).

Transfer steaks to a cutting board and tent loosely with foil; rest for 6–8 minutes so juices redistribute.
Plating & Finish

Spoon a generous portion (about 3/4 cup) of mashed potatoes onto the center of each warm plate and spread slightly to create a base.

Place a rested filet mignon on top of the mashed potatoes.

Ladle 3–4 tablespoons of the warm crab cream reduction over the top of each filet, allowing some to drizzle onto the potatoes.
