Pinot Noir is a red wine that’s bright, earthy, and light-to-medium-bodied, with flavors of raspberry, cherry, and mushroom. It’s versatile enough to pair well with most foods.

Chill the bottle of Pinot Noir lightly: place in the refrigerator for 30–60 minutes before serving so the wine is cool but not cold (ideal 55–60°F / 13–16°C).

Open the bottle about 20–30 minutes before serving to allow the wine to breathe and reveal its aromas and flavors.

Decant the wine into a decanter or one large wine glass if desired to increase aeration and let subtle earthy and fruit notes develop.

In a small saucepan over low heat, combine the fresh raspberries, halved cherries, 2 tablespoons water, and 1 teaspoon honey or simple syrup. Gently warm and stir for 2–3 minutes until fruit releases some juices but retains shape. Remove from heat and let cool slightly. Use 1–2 tablespoons of the warm fruit + juices to spoon into individual wine glasses as a supplementary accent if you want a fruit-forward touch. Reserve remaining fruit for cheese board or dessert.

Quick Warmed Fruit Garnish (optional)

For a complementary earthy aroma that highlights the Pinot Noir’s mushroom notes: place the sliced cremini or shiitake mushrooms in a dry skillet over medium heat and sauté without oil for 2–3 minutes, stirring, until they become aromatic and slightly browned. Remove from heat and place the warm mushrooms on a small dish to set beside the glass for guests to smell between sips, or add 1–2 slices atop a small crostini with softened cheese for a pairing bite.

Mushroom Aroma Accent (optional)

Arrange the 4 oz of soft cheese (brie, camembert or mild goat cheese) on a small board. Spoon warmed fruit (if using) and the sautéed mushrooms beside the cheese. Add crusty bread or crackers. Add fresh thyme sprigs for garnish and aromatic contrast.

Assemble Cheese & Bread Pairing

To serve: pour 5–6 oz (150–180 ml) of the decanted Pinot Noir into large-bowled red wine glasses. If using the warmed fruit accent, add a small spoonful into the glass or onto the cheese-topped cracker as preferred.

Encourage tasting the mushroom-scented crostini or smelling the thyme between sips to enhance perception of the wine’s earthy and herbal notes.
