Rinse the fish and shrimp under cold water and pat dry with paper towels. Cut the fish into uniform 1/2-inch cubes. If using larger shrimp, cut into 1/2-inch pieces; if small, you may leave whole. Place seafood in a glass or nonreactive bowl.

Cut seafood

Whisk together the fresh lime juice and lemon juice (if using) with the kosher salt and sugar (if using) until dissolved. Pour the citrus mixture over the seafood so it is fully submerged. Stir gently to combine.

Prepare citrus marinade

Cover the bowl with plastic wrap and refrigerate. For small shrimp and 1/2-inch fish cubes, marinate 20–30 minutes until the fish turns opaque and firms — it should look 'cooked' through. Do not exceed 2 hours or the texture will become overly firm and chalky.

Marinate

While seafood marinates, place thinly sliced red onion in a small bowl with 1–2 tablespoons of lime juice from the prepared batch and a pinch of salt; let sit 10 minutes to take the raw edge off, then drain excess juice if needed.

Prepare onions

Seed and finely dice the tomatoes and cucumber (if using). Finely mince the jalapeño/serrano (remove seeds for less heat) and garlic. Roughly chop the cilantro leaves (discard thick stems).

Dice vegetables and mince aromatics

When seafood is opaque and 'cooked' (after 20–30 minutes), drain about half of the citrus marinade if you prefer a less soupy ceviche. Leave enough to lightly coat the seafood for flavor and food-safety acidity. Reserve a few tablespoons if you plan to use as a finishing splash.

Strain or keep marinade

Add the drained red onion, diced tomatoes, cucumber, minced chile, garlic, and chopped cilantro to the marinated seafood. Gently fold to combine so the ingredients are evenly distributed.

Mix ceviche

Taste and adjust seasoning: add kosher salt or a splash more lime juice if needed. Stir in the extra-virgin olive oil (optional) and freshly ground black pepper.

Season and adjust

Gently fold in the diced avocado right before serving to avoid browning. If made ahead, wait to add avocado until the last 10 minutes. Chill the combined ceviche in the refrigerator 5–10 minutes to meld flavors, but serve cold.

Transfer ceviche to a serving bowl or individual glasses. Garnish with extra cilantro leaves and lime wedges. Serve immediately with tortilla chips or toasted corn on the side.

Place the martini glass in the freezer for 5–10 minutes or fill it with ice and cold water while you prepare the cocktail to ensure the finished drink is properly chilled.

Chill the glass

Fill a mixing glass with plenty of fresh ice (about 1 cup) to thoroughly chill and slightly dilute the cocktail while stirring.

Add ice to mixing glass

Using a jigger, pour 2.5 oz dry gin and 0.5 oz dry vermouth into the mixing glass. If you like a slightly more aromatic note, add 1 dash of orange or lemon bitters (optional).

Measure and pour

Stir the mixture with a bar spoon for 20–30 seconds (about 30–40 full turns) until the outside of the mixing glass feels very cold and the drink is slightly diluted and crystal clear. If you prefer a shaken martini, add the ingredients and ice to a cocktail shaker and shake vigorously for 10–12 seconds; note this will produce more dilution and a slightly cloudy appearance.

Stir (preferred) or shake

If you chilled with ice and water, dump the ice and water from the martini glass. For a lemon twist garnish, use a peeler or small knife to cut a 1-inch strip of lemon peel, removing excess pith.

Prepare the glass

Using a strainer, strain the chilled cocktail into the prepared martini glass. Express the lemon peel over the surface by holding it skin-side down and giving it a quick twist to release oils, then rim the glass with the peel and drop it in, or alternatively, skewer a green olive and place it in the glass.

Strain and garnish

Serve immediately while very cold. Sip and enjoy. If serving multiple cocktails, repeat the process for each drink or scale ingredients accordingly.

Use the jigger to measure spirits accurately. Use the mixing glass and bar spoon for stirring; use a shaker only if you want a shaken martini. Use the strainer to prevent ice shards from entering the glass. Chill the martini glass beforehand for best presentation and temperature.

Pat shrimp dry with paper towels. In a bowl, toss shrimp with kosher salt, black pepper, and paprika (if using) until evenly coated.

Season shrimp

Heat a large skillet over medium-high heat until hot. Add 1 tablespoon olive oil. When oil shimmers, add half the shrimp in a single layer (do not overcrowd). Cook 1 to 1.5 minutes without moving until edges turn pink and begin to brown. Flip and cook 30–60 seconds more until just opaque. Transfer cooked shrimp to a plate and repeat with remaining tablespoon oil and remaining shrimp. Do not overcook—shrimp will finish in the sauce.

Reduce heat to medium. In the same skillet, add 1 tablespoon butter and the remaining 2 tablespoons butter (total 3 tbs) along with 1 tablespoon olive oil if pan looks dry. Add minced garlic and cook, stirring, 30–45 seconds until fragrant but not brown.

Build the sauce

Deglaze the pan with the white wine (or chicken broth), scraping up brown bits from the bottom. Allow liquid to simmer briskly for 2–3 minutes to reduce slightly and concentrate flavor.

Stir in lemon juice, lemon zest, and red pepper flakes. Taste and adjust seasoning with a pinch more salt or pepper if needed.

Return the cooked shrimp and any collected juices to the skillet. Add the remaining butter (if any) and toss to coat. Cook together 1 minute so shrimp finish cooking and absorb sauce flavors.

If making pasta, add cooked pasta and 1/4–1/2 cup reserved pasta water to the skillet and toss vigorously to marry the sauce and pasta into a silky coating. Add more pasta water a tablespoon at a time if needed to loosen the sauce.

Remove from heat and stir in chopped parsley and grated parmesan (if using). Taste and adjust lemon, salt, or pepper to preference.

Divide pasta and shrimp among plates or bowls. Spoon extra sauce over the top. Serve with lemon wedges alongside for squeezing and an extra sprinkle of parsley or parmesan if desired.

Estimated leftover: best served immediately. Refrigerate any leftovers in an airtight container up to 2 days; reheat gently to avoid overcooking shrimp.

Preheat oven to 350°F (175°C). Grease the bottom and sides of a 9-inch springform pan and line the bottom with a circle of parchment paper. Pulse graham crackers in a food processor until fine crumbs form, or place crackers in a sealed bag and crush with a rolling pin until fine.

Prepare pan and crumbs

Combine graham cracker crumbs, granulated sugar, melted butter, and 1/4 tsp salt in a bowl. Mix until evenly moistened and the texture holds when pressed. Press the mixture firmly and evenly into the bottom (and optionally 1 inch up the sides) of the prepared springform pan using the bottom of a measuring cup or a flat glass.

Bake crust for 8-10 minutes until set and slightly golden. Remove from oven and allow to cool while preparing filling. Reduce oven temperature to 325°F (163°C).

Ensure cream cheese, sour cream, and eggs are at room temperature (this prevents lumps). Preheat oven (if you reduced temperature earlier) to 325°F (163°C) if not already set.

Warm and prep ingredients

In a large bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the room-temperature cream cheese on medium-low speed until smooth and creamy (about 2–3 minutes). Scrape down the sides. Add the granulated sugar and beat on medium speed until fully incorporated and smooth, about 1–2 minutes. Do not overbeat.

Mix in the cup of sour cream, vanilla extract, lemon juice, and 1/4 tsp salt on low speed until combined and smooth.

Add sour cream and flavorings

Add the eggs one at a time, mixing on low speed and scraping the bowl between additions. Mix each egg just until incorporated — avoid whipping air into the batter.

Incorporate eggs

Sift or sprinkle the 2 tablespoons of flour over the batter and fold or beat on low speed just until combined and smooth. The batter should be thick and creamy with no lumps. Scrape into the cooled crust and smooth the top with an offset spatula.

Wrap the outside bottom of the springform pan with a double layer of heavy-duty aluminum foil to prevent water leaks. Place the filled springform pan inside a larger roasting pan. Carefully pour hot (not boiling) water into the roasting pan until it reaches about halfway up the sides of the springform pan (about 1–1.5 inches).

Prepare a water bath (bain-marie)

Bake at 325°F (163°C) for 50–65 minutes, or until the edges are set and lightly puffed but the center still slightly jiggles when gently shaken. The internal temperature should read about 150–155°F (65–68°C) if using a thermometer.

Bake gently

Turn off the oven and crack the oven door open. Let the cheesecake cool inside the oven for 1 hour to reduce the chance of cracking. After 1 hour, remove the cheesecake from the water bath and discard the water. Run a thin knife around the edge to loosen from the pan (this helps prevent cracks while cooling).

Cool gradually

Allow the cheesecake to cool to room temperature on a wire rack, then refrigerate (covered) for at least 8 hours or preferably overnight to fully set and develop flavor.

Chill

About 15–30 minutes before serving, stir together 1/2 cup sour cream, 2 tbsp powdered sugar, and 1/2 tsp vanilla extract until smooth. Spread evenly over the chilled cheesecake.

Prepare topping

Arrange fresh berries on top of the sour-cream topping or serve on the side. Release the springform pan and transfer the cheesecake to a serving plate. Slice with a hot, clean knife (dip in hot water and wipe between slices) for clean cuts. Serve chilled.

Remove the pork chops from the refrigerator 20–30 minutes before cooking to bring them closer to room temperature. Pat both sides and the edges very dry with paper towels. Combine kosher salt, black pepper, garlic powder, and smoked paprika, then sprinkle evenly over both sides and the edges of each chop, pressing gently so the seasoning adheres.

Heat a large heavy skillet (cast-iron preferred) over medium-high heat until very hot, about 2–3 minutes. Add the olive oil and swirl to coat.

Preheat pan

Add the pork chops to the hot pan without crowding (work in batches if necessary). Sear undisturbed for 3–4 minutes until a deep golden-brown crust forms. Flip and sear the other side for 3 minutes.

Sear chops

Reduce heat to medium. Add the butter, smashed garlic cloves, and thyme sprigs to the pan. As the butter melts, tilt the pan slightly and spoon the melted butter and aromatics over the chops (baste) for about 1–2 minutes to build flavor and finish cooking. Continue until the internal temperature reaches 140–145°F (60–63°C) for slightly pink center or 150°F (65°C) for fully cooked, about 2–4 more minutes depending on thickness.

Add butter & aromatics

Transfer the chops to a cutting board and tent loosely with foil. Rest for 5–7 minutes (temperature will rise a few degrees). Resting allows juices to redistribute for a juicy chop.

Rest

While chops rest, carefully pour off excess fat from the pan, leaving about 1 tablespoon and any fond (browned bits). Return the pan to medium heat and add the finely chopped shallot. Sauté for 1–2 minutes until softened and translucent.

Pour in the white wine (or 1/4 cup chicken broth) to deglaze, scraping up browned bits with a wooden spoon. Let the liquid reduce by about half, 1–2 minutes. Add the 1/2 cup chicken broth and Dijon mustard, stirring to combine. Simmer gently for 2–3 minutes to meld flavors.

Deglaze & simmer

Stir in the heavy cream (if using) and simmer 1 more minute until slightly thickened. Taste and season with 1/4 tsp salt and 1/4 tsp pepper. Spoon the sauce over the rested pork chops and serve.

Place 0.75 cup fresh breadcrumbs in a medium bowl and pour 0.25 cup whole milk over them. Stir gently and let sit 5 minutes until the crumbs absorb the milk and form a paste.

In a large bowl, add 1 lb ground beef, 0.5 lb ground pork, the soaked breadcrumb mixture, 1 large egg, 0.25 cup grated Parmesan, 2 tbsp chopped parsley, 2 minced garlic cloves, 1.5 tsp Kosher salt, 0.75 tsp freshly ground black pepper, and 0.5 tsp dried oregano. Using your hands or a spatula, gently mix until just combined — avoid overworking to keep meatballs tender (about 20–30 light turns).

Combine meatball ingredients

Portion the mixture into 18–20 equal pieces (about 1.25 oz / 35 g each) using a cookie scoop or tablespoon. Roll each portion gently between your palms to form compact but not tightly packed balls. If desired, roll each meatball lightly in 0.5 cup fine dry breadcrumbs for a slightly firmer crust.

Shape meatballs

Heat a large skillet over medium heat and add 2 tbsp olive oil. When oil shimmers, add meatballs in a single layer without crowding (work in batches if necessary). Brown on all sides, turning carefully with tongs, about 6–8 minutes total until deep golden but not fully cooked through. Transfer browned meatballs to a plate and reserve pan drippings.

Option A — Oven finish: Preheat oven to 375°F (190°C). Place browned meatballs on a rimmed baking sheet and bake 8–10 minutes until internal temperature reaches 160°F (71°C). Option B — Simmer in sauce: Proceed to the 'Pan sauce / Simmering liquid' section and simmer meatballs in sauce for 15–20 minutes until cooked through.

Finish cooking (two options)

After removing browned meatballs, keep the skillet on medium heat. If pan is dry, add 1 tbsp olive oil. Add any fond in the pan and stir in 1 tbsp tomato paste; cook 30–45 seconds to remove raw taste. Pour in 2 cups crushed tomatoes and 0.5 cup stock, scraping the browned bits from the bottom with a wooden spoon. Stir in 0.25 tsp sugar (if using) and 0.25 tsp red pepper flakes. Bring the sauce to a gentle simmer.

Make pan sauce

Gently nestle the browned meatballs into the simmering sauce, spooning sauce over the tops so they are partially submerged. Cover partially with a lid and simmer on low for 15–20 minutes, turning once or twice, until meatballs reach 160°F (71°C) internal temperature and sauce thickens slightly.

Simmer meatballs in sauce

Stir in 2 tbsp chopped fresh basil or parsley into the sauce, taste and adjust seasoning with salt and pepper. Serve meatballs hot with sauce spooned over — on pasta, in a sub, or with mashed potatoes. Garnish with extra grated Parmesan if desired.
