Instructions for Key Lime Pie
Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until golden brown. Remove from oven and let cool.
Make the Filling
In another bowl, whisk together the egg yolks and the remaining 1/4 cup of granulated sugar until smooth. Gradually mix in the sweetened condensed milk, Key lime juice, and lime zest until fully combined.
Assemble the Pie
Pour the Key lime filling into the cooled graham cracker crust. Spread evenly. Bake in the preheated oven for 15 minutes. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or until set.
Prepare the Whipped Cream
In a mixing bowl, beat the heavy whipping cream and powdered sugar until soft peaks form. Be careful not to overbeat.
Serve
Once the pie is set, slice and serve with a dollop of whipped cream and garnish with lime slices.
