Preparation
Mix Filling
In a mixing bowl, combine the shredded chicken, diced jalapenos, pepper jack cheese, and softened cream cheese. Mix well until all ingredients are evenly blended.
Form Eggs
Take a small amount of the mixture and shape it into an egg-like form, about the size of a golf ball. Repeat until all the mixture is used.
Prepare Coating
Place the crushed saltine crackers in a shallow dish. Roll each formed egg in the crushed crackers until fully coated.
Cook Eggs
Preheat your oven to 375°F (190°C). Place the coated eggs on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown and heated through.
Serve
Remove from the oven and let cool slightly. Serve warm with ranch dressing on the side for dipping.
