Prepare Syrup (if making simple syrup)
1. Make Simple Syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Bring to a gentle simmer over medium heat, stirring until sugar dissolves. Remove from heat and let cool to room temperature. Store leftover syrup refrigerated for up to 2 weeks. Use 1/2 cup syrup for the recipe (or substitute 1/2 cup neutral-flavored syrup).
Infuse Flavor
2. Muddle Aromatics
In a large pitcher, add the fresh mint leaves, sliced ginger, and orange peel. Using a wooden spoon or muddler, gently press (muddle) the ingredients 6–8 times to release oils and aromas — avoid pulverizing the mint into bits.
3. Add Juices and Syrup
Pour the fresh lemon juice, lime juice, orange juice, and 1/2 cup prepared simple syrup into the pitcher with the aromatics. Stir vigorously for 20–30 seconds to combine and help extract additional flavor from the solids.
4. Steep (optional)
Allow the mixture to sit at room temperature for 10–15 minutes for a mild infusion. For stronger ginger or mint notes, steep up to 30 minutes, then strain before proceeding.
Assemble Soft Drink
5. Strain
Place a fine-mesh sieve over a clean pitcher or bowl and strain the juice-syrup mixture to remove mint, ginger, and peel. Press gently on solids with the back of a spoon to extract remaining liquid, then discard solids.
6. Add Carbonation
Slowly pour the 4 cups of chilled carbonated water into the strained citrus-flavored base. Stir gently once or twice with a long spoon to combine — avoid vigorous stirring to preserve effervescence.
7. Finish and Chill
Add the vanilla extract and taste. Adjust sweetness with more simple syrup (1–2 tsp at a time) or tartness with a splash of lemon or lime juice. Refrigerate for 10 minutes if needed to chill thoroughly.
Serve
8. Fill four tall glasses with ice (about 1 cup per glass). Pour the soft drink over the ice, dividing evenly. Garnish each glass with a lemon slice, lime wheel, and a mint sprig. Serve immediately.
