Preparation

Hot Genmaicha

1. Heat water

Heat fresh filtered water to 175°F (80°C). If you don't have a thermometer, bring water to a near simmer and let it sit 1–2 minutes to cool slightly.

2. Measure tea

Place 2 tsp genmaicha loose leaf into a teapot or infuser (for one 12 oz serving).

3. Steep

Pour 12 oz (about 350 ml) of the 175°F water over the tea leaves. Steep for 1.5 to 2 minutes for a light cup, or up to 3 minutes for a fuller flavor. Avoid steeping longer than 3 minutes to prevent bitterness.

4. Strain and serve

Remove tea leaves by lifting the infuser or straining into a cup. Taste and, if desired, sweeten with up to 1 tsp honey or sugar or squeeze a lemon wedge to taste. Serve immediately.

Iced Genmaicha (quick method)

5. Brew double-strength

Use the same ratio but brew double-strength so flavors hold up when iced: place 4 tsp genmaicha in a heatproof pitcher or large infuser and pour 24 oz (700 ml) water at 175°F (80°C) over the leaves. Steep 2 minutes.

6. Cool and sweeten

Remove leaves and let the brewed tea cool at room temperature for 10–15 minutes. If you want it sweetened, stir in 1 tsp simple syrup while warm so it dissolves evenly.

7. Ice and serve

Fill a glass with about 1 cup ice cubes, pour the cooled tea over the ice, and serve immediately. Adjust sweetness or add a lemon wedge to taste.
