Prep and Clean Yarrow

    Choose young, tender yarrow leaves and small stems. Rinse thoroughly under cold running water to remove dirt and insects. Pat dry with paper towels or spin briefly in a salad spinner. Trim any tough stems and measure 1 cup packed leaves.

    If you are unsure about identifying yarrow, do not use it. Use common garden varieties and only the young upper foliage for the best flavor and tenderness.

Blend Aromatics and Herbs

    Pulse Herbs

    In a small food processor or blender, combine the washed yarrow leaves, garlic cloves, and fresh parsley. Pulse 6–8 times until the herbs and garlic are finely chopped but not pureed. This step releases flavor and helps them integrate smoothly into the tahini.

    Scrape down the sides with a spatula to ensure even chopping.

Make Tahini Sauce

    Combine Tahini and Lemon

    In a medium bowl or the blender jar, add the tahini and fresh lemon juice. Whisk or blend briefly until the mixture thickens and becomes slightly paler (this prevents lumping when water is added).

    Emulsify with Water and Oil

    Gradually add 3/4 cup warm water in a slow, steady stream while whisking or blending on low. Continue until the sauce is creamy and pourable. Add 2 tablespoons olive oil and blend to incorporate. If the sauce is too thick, add up to 2 extra tablespoons warm water (as listed in Optional Adjustments) to reach desired consistency.

    Incorporate Herbs

    Add the pulsed yarrow-parsley-garlic mixture to the tahini base. Blend or whisk until evenly distributed and the sauce is smooth. Taste for seasoning.

    Stir in 1 teaspoon salt and 1/4 teaspoon freshly ground black pepper. If the yarrow has a bitter or astringent edge, add 1 teaspoon honey or maple syrup to balance. Blend briefly and adjust lemon, salt, or water to taste.

Finish and Serve

    Transfer the yarrow tahini sauce to a serving bowl or jar. Drizzle 1 tablespoon extra olive oil over the top and garnish with a light dusting of sumac or smoked paprika if using. Let the sauce rest 10–15 minutes at room temperature to allow flavors to meld; the sauce will thicken slightly.

    Serve chilled or at room temperature as a dip for vegetables, spread for flatbreads and sandwiches, or drizzle over roasted vegetables, grilled meats, or grain bowls. Store leftovers in an airtight container in the refrigerator for up to 4 days. Stir before serving; thin with a splash of water if it firms up.
