Method
Relish base
- 1
Prepare shoots and blossoms
Trim and discard any tough or woody ends from the salmonberry shoots. Rinse the shoots briefly in cold water and pat dry. Chop the tender tips into roughly 1/4-inch pieces to yield about 1.5 cups. Gently rinse the salmonberry blossoms, remove any green calyx or stems, and toss the petals dry on paper towels; measure 1/2 cup of petals.

- 3
Combine dressing
In a small bowl, whisk together 3 tablespoons extra-virgin olive oil, 2 tablespoons fresh lemon juice, 1 tablespoon apple cider vinegar, 1 teaspoon honey or maple syrup, 3/4 teaspoon sea salt, and 1/4 teaspoon freshly ground black pepper until the honey dissolves and the mixture emulsifies.
- 4
Build the relish
In a medium mixing bowl, combine the chopped salmonberry shoots, salmonberry petals, minced shallot, minced jalapeño, and chopped herbs. Pour the dressing over the mixture and toss gently but thoroughly so the petals and shoots are evenly coated. Taste and adjust seasoning with an additional 1/4 teaspoon salt or a squeeze more lemon if desired.
- 5
Marinate briefly
Let the relish sit at room temperature for 15–20 minutes to allow flavors to marry and the shoots to soften slightly. If making ahead, cover and chill up to 4 hours; bring back to room temperature for 20 minutes before serving.
Optional finishing & serving
- 6
Toast the nuts in a dry skillet over medium heat for 2–3 minutes, stirring, until fragrant and lightly browned. Cool slightly and chop coarsely. Sprinkle the nuts over the relish just before serving for crunch.
- 7
If using, stir in 1 teaspoon grated lemon zest into the relish to brighten the flavors right before serving.
- 8
Serve the salmonberry shoot and blossom relish spooned over toasted crusty bread or alongside crackers. Alternatively, serve atop grilled fish, roasted vegetables, or as a fresh condiment for sandwiches. Garnish with microgreens or baby salad leaves.
- 9
Store any leftovers in an airtight container in the refrigerator for up to 48 hours; flavor and texture are best within the first day.
