Roasted Cauliflower

Preheat and prepare
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment or lightly oil it. Remove outer leaves from the cauliflower and trim the stem so the head sits flat. Cut cauliflower into thick steaks (about 3/4 to 1 inch) or into large florets if preferred; reserve smaller pieces for another use or roast alongside.

Season
Place cauliflower pieces on the prepared sheet. Drizzle with 2 tbs olive oil, sprinkle 1 tsp sea salt and 1/2 tsp black pepper, and rub so each piece is evenly coated.

Roast
Roast in the preheated oven 22–28 minutes, flipping once halfway through, until edges are deeply browned and centers are tender when pierced with a knife. Cooking time depends on size of pieces.
Reishi Miso Sauce

Combine miso and reishi
In a small bowl, whisk together 3 tbs white miso paste and 1 tsp reishi powder until uniform.

Add aromatics and liquids
Stir in 1 tsp grated ginger, 1 tsp minced garlic, 1 tbs rice vinegar, 1 tsp mirin, and 2 tbs warm water to thin the mixture to a pourable but thick sauce. Adjust water 1 tsp at a time if needed. Taste and balance: add a touch more rice vinegar or mirin if it needs brightness or sweetness.

Finish
Whisk in 1/2 tsp sesame oil for aroma. If sauce is too assertive, dilute with another small splash (1–2 tsp) warm water until desired consistency is reached. Keep sauce at room temperature until cauliflower is ready.
Pepperkraut (Quick Ferment/Quick Pickle)

Make brine
Dissolve 1 tsp kosher salt and 1/2 tsp sugar in 1/2 cup water. Stir in 1 tbs apple cider vinegar and 1/4 tsp crushed black peppercorns.

Combine vegetables
Place 1 cup red bell pepper, 1 cup yellow bell pepper, 1/2 cup green bell pepper, 1/2 cup julienned carrot and 1/4 cup sliced shallot in a clean jar or bowl. Pour the brine over the vegetables, pressing them down so liquid covers them. If using a jar, leave a little headspace; weight the vegetables beneath the brine if necessary.

Ferment/pickle
For quick pickled pepperkraut, refrigerate for at least 1 hour up to 24 hours before serving — flavor improves over time. For a lightly fermented kraut (optional), leave at room temperature 12–24 hours loosely covered, then refrigerate. The result should be bright, slightly tangy and crunchy.

Drain before serving
Just before plating, drain excess brine (reserve a splash if you like extra brightness). Taste and adjust with a pinch of salt or a little more vinegar if needed.

Top each portion with 2–3 tbs pepperkraut, letting some of the bright vegetables and their juices mingle with the miso.

Garnish with 1 tsp toasted sesame seeds, 1 tbs thinly sliced scallions, and optionally a squeeze (1/2 tbs) of fresh lemon juice for brightness.

Serve immediately as a warm vegetable main or side. Leftovers: keep sauce and pepperkraut refrigerated separately; reheat cauliflower gently in a 350°F oven to preserve texture.
