Prepare loaf
Cut the round loaf in half horizontally. Remove and reserve roughly 1/2"–1" of interior bread from the bottom half to create a cavity for the filling (save removed bread for breadcrumbs).

Spread butter and olive salad
Lightly butter the cut surfaces to help prevent sogginess (about 1/2 tbs divided). Spread about 1/2 cup olive salad across the entire bottom cut surface and a thin layer on the inside of the top half.

Assemble meats and cheeses
Layer the sliced salami, capicola, mortadella evenly over the olive-salad-coated bottom. Top the meats with provolone and mozzarella slices in a single layer to help bind the sandwich.

Finish and press
Place the top half of the loaf over the fillings. Press the sandwich gently to compress and allow flavors to meld. Wrap tightly in plastic wrap and let rest at room temperature for 15–30 minutes (or refrigerate up to 2 hours) to let the olive salad permeate the bread for a classic muffalotta texture. For a warm option: toast in a 350°F (175°C) oven 6–8 minutes until cheese softens.

Slice and serve
Unwrap and slice the loaf into halves; serve one half as the menu portion. Trim edges if desired so each half is neat. Place on plate beside the red beans & rice and pour the drink.

Cook the sofrito
In a small saucepan or skillet over medium heat, warm 1/2 tsp oil or butter. Add the chopped onion, celery and green pepper (the classic 'holy trinity') and cook, stirring, until softened, about 4–5 minutes. Add the minced garlic and cook 30 seconds until fragrant.

Add sausage and seasonings
Add the sliced andouille or smoked sausage to the pan and cook 1–2 minutes to brown slightly. Stir in the tomato paste, Cajun seasoning, Worcestershire sauce, salt and pepper; cook 30–45 seconds to bloom the spices.

Simmer with beans
Add the drained red beans and 1 cup stock to the pan. Bring to a gentle simmer, reduce heat to low, and cook uncovered 8–10 minutes to thicken and allow flavors to marry. Smash a few beans lightly with the back of a spoon to create a creamier texture while leaving some whole.

Finish with rice
Stir in the cooked rice and heat through 1–2 minutes until the mixture is hot and slightly saucy. Taste and adjust seasoning with additional salt, pepper, or Cajun seasoning if needed. If mixture is too thick, add up to 2–3 tbs more stock to reach desired consistency.
