Crawfish Preparation

    Pat crawfish tails dry with paper towels. Season lightly with 1/4 tsp kosher salt, 1/8 tsp black pepper and 1/2 tsp hot sauce (if using). Allow to sit 5 minutes to absorb seasoning.

Breading & Batter

    In a shallow bowl or plate, whisk together dry breading ingredients: 1/2 cup all-purpose flour, 2 tbs cornstarch, 1 tbs fine cornmeal (if using), 1 tsp paprika, 1/2 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp cayenne, 1/4 tsp dried thyme and 1/8 tsp freshly ground black pepper. Mix until evenly combined.

    In a separate bowl, whisk the wet batter: 1/3 cup buttermilk, 1/2 of a large egg (beat the egg and use half), and 1/4 tsp Worcestershire sauce. Whisk until smooth and slightly thickened.

    Set up a breading station: seasoned flour mixture in one shallow dish and the wet batter in another. Keep a small plate for finished breaded tails.

Breading the Crawfish

    Working in small batches, dip each seasoned crawfish tail first into the wet batter to lightly coat, letting excess drip off, then press into the dry flour mixture to fully coat. For an extra-crispy finish, double-dip: after the first dry coat, briefly return to the wet batter and a second dry coat. Place breaded tails on the plate and let rest 2–3 minutes so the coating adheres.

Frying

    Pour about 1 cup neutral oil into a small heavy skillet (or enough to provide about 1/2–1 inch depth). Heat over medium-high until the oil reaches 350°F (175°C). If you don't have a thermometer, test with a small pinch of breading — it should sizzle and brown steadily without burning.

    Fry the breaded crawfish tails in a single layer in batches (do not overcrowd). Fry for 1 to 1 1/2 minutes per side, turning once, until golden brown and crisp. Because tails are small, cooking is quick — use a slotted spoon or tongs to turn gently.

    Transfer fried tails to a wire rack set over a baking sheet or to paper towels to drain. Season lightly with a pinch of salt immediately while hot. Repeat with remaining tails, keeping finished batches warm in a 200°F (95°C) oven if needed.

Finish & Serve

    Arrange the fried crawfish tails on a small platter. Garnish with chopped fresh parsley (about 1 tsp) and serve with lemon wedges and 2 tbs remoulade or tangy dipping sauce on the side.
