pound and season
If chicken breasts are unevenly thick, place each between plastic wrap and pound to about 3/4-inch thickness. Pat dry with paper towels. In a small bowl combine salt, black pepper, paprika, garlic powder and cayenne (or use 2 tbs blackening spice). Rub chicken breasts with 2 tbs olive oil, then evenly coat with the seasoning mixture on both sides.

For grilling: preheat a grill or grill pan over medium-high (about 425°F/220°C). Oil the grates. Cook chicken 5–6 minutes per side until internal temperature reaches 165°F (74°C) and juices run clear. For blackened: heat a heavy skillet (cast iron) over medium-high until smoking, add 1 tbs butter or oil, press seasoned chicken into skillet and cook 4–5 minutes per side until charred at edges and cooked through (165°F). Remove and rest 5 minutes before assembling.

While chicken cooks, heat a skillet over medium heat. Add bacon strips and cook until crisp, turning occasionally, 6–8 minutes. Drain on paper towels and keep warm. Reserve 1 tbs bacon fat optional for toasting buns if desired.

melt cheese on chicken
Place the cooked chicken back on the hot pan or under a broiler for 30–60 seconds. Top each breast with a slice of provolone and cover briefly until cheese has just melted.

assemble sandwiches
Spread 2 tbs mayonnaise on the bottom half of each toasted bun. Place a romaine leaf, then the provolone-topped chicken breast, followed by two bacon slices, sliced avocado, and 2–3 tomato slices. Add another romaine leaf if you like extra crunch. Spread remaining mayo on the top bun and close sandwich. Slice in half and serve immediately with fries.

oven fries (recommended)
Preheat oven to 425°F (220°C). Toss fries with 2 tbs oil, salt and pepper on a baking sheet in a single layer. Bake 18–25 minutes, flipping once halfway, until golden and crisp. Remove and season to taste.

fried fries (alternative)
Heat 2 in (5 cm) of vegetable oil in a heavy pot to 350°F (175°C). Fry fries in batches 3–4 minutes until golden and crisp. Drain on paper towels and season with salt and pepper immediately.
