Preheat the oven to 400°F (205°C). Place a 8-inch cast-iron skillet or an 8x8-inch square baking pan in the oven while it heats to get the pan hot for a crisp bottom.

If using frozen corn, thaw and drain any excess liquid. Finely dice the jalapeños (remove seeds for mild heat, keep a few seeds for more heat). Shred the cheddar and thinly slice the scallions.

Make the Batter

In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and fine salt until evenly combined.

In a separate bowl or large measuring cup, whisk together buttermilk, eggs, melted butter, and vegetable oil until smooth and slightly frothy.

Pour the wet ingredients into the dry ingredients and stir with a rubber spatula or wooden spoon just until combined. Do not overmix; some small lumps are fine.

Fold in the corn kernels, diced jalapeños (reserve about 1 tablespoon for the top if desired), shredded cheddar (reserve 2 tablespoons for the top), and sliced scallions. Scrape the batter into a bowl, scraping down to ensure even distribution.

Bake

Carefully remove the preheated skillet or pan from the oven using oven mitts. Add 1 tablespoon of butter to the hot pan and swirl to coat the bottom and sides.

Pour the batter into the hot, buttered pan and smooth the top with a spatula. Sprinkle the reserved jalapeño pieces and reserved 2 tablespoons cheddar over the top, and lightly sprinkle the coarse salt.

Bake in the preheated oven for 18–22 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs. If using a deeper 9-inch pan, baking time may increase by 3–5 minutes—watch for doneness.

Finish & Serve

Remove the skillet or pan from the oven and, if desired, dot the top with the remaining 1 tablespoon of butter to melt and gloss the surface. Let the cornbread rest for 5–10 minutes to set.

Run a knife around the edge and transfer to a cutting board. Slice into 8 squares or wedges (if using a skillet). Serve warm with additional butter, honey, or a smear of sour cream if desired.
